4 c Strawberry juice 7 1/2 c Sugar 1 Bottle fruit pectin Wash, and remove stems and hulls from 3 quarts fully ripened strawberries. Crush thoroughly. Drain through jelly bag. Combine juice and sugar. Heat rapidly to boiling. Add fruit pectin. Stir constantly before and while boiling. Heat to full rolling boil. Boil hard 1/2 minute. Remove from fire. Skim. What you'll need: 2 lbs fresh strawberries 2 cups granulated sugar 1 Tbsp lemon juice
This recipe requires 2 lbs of strawberries which is approximately 4 1/2 cups of firmly packed chunked strawberries. You may use frozen berries if you wish but thaw them first. You can also use blueberries, raspberries, blackberries or any combination thereof.
Also, you cannot reduce the sugar in this recipe. It will not work. Since this is essentially a candy, it just doesn't work with less sugar.
If you wish to use a candy thermometer, you can do so. You will need to cook this to 220*F.

Don't let those delicious berries go to waste; making homemade jam is readdly easy an so satisfying; a little taste of summer waiting in a jar. Try adding other berries, flavorings like vanilla, black pepper, orange zest, almond extract, or even steep some herbs for a minute or two. Have fun experimenting and don't forget to keep stirring!
