Recipe - Straw and Hay
INGREDIENTS:
●1 (8 ounce) package regular egg fettuccine
●1 (8 ounce) package spinach fettuccine (can use egg and boil in spinach juice)
●1 cup thinly sliced julienne cut ham or 1 cup Canadian bacon
●1 cup sliced mushroom , of your choice
●1 cup frozen green pea 1/2 cup sweet butter
●1 1/2 cups heavy cream
●1 1/4 cups grated parmesan cheese
●1/2 teaspoon salt
●1/2 teaspoon pepper

This timballo recipe really needs a group to make all the different stages! This version is a speciality of Aquilano in Teramo province, Abruzzo. Despite having at least 13 layers, the use of scrippelle, very thin crepes, keeps it light.
The festival or saga takes place on the first weekend in August if you happen to be in Abruzzo.
Pasta Grannies discover two lasagne recipes from Macerata in central Italy
The charming, opera loving, university town of Macerata in central Italy has two celebratory lasagna dishes for two very different occasions in this episode: vincigrassi and princigras.
Big thanks to sisters Letizia and Iginia Carducci from Osteria dei Fiori; the Piediripa Proloco; and the commune of Macerata for letting us climb the main tower. This is the recipe for princisgras given by Letizia:
Ingredients for 6 people:
200g diced prosciutto, 1 litre whole milk, 100g butter, 50g plain flour, 200g cream, salt, pepper, nutmeg, olive oil as needed, 100g black truffle, 500g fresh pasta, grated Parmigiano cheese as needed
Method
Fry the diced ham with very little olive oil; melt 50 g of butter over a moderate heat, stir in 50g of flour, cook for a minute and then add 1 litre of milk, salt, pepper, grated nutmeg to make the béchamel sauce,
Arrange in a baking dish the sheets of fresh egg pasta, previously scalded in boiling salted water, drained and dried on a cloth, in layers with the prepared sauce, adding truffles and Parmesan cheese to make 5-8 layers (depending on the dish) then bake at 180 °C until it is bubbling and browned.
Tallarines Mixtos con Ragú a la Toscana / Tagliatelle Paglia e Fieno
Tagliatelle Paja y Heno. La paja, los tagliatelle amarillos, se preparan de forma clásica con huevo, harina y sémola para darle una textura más rústica. El heno, los tallarines verdes, se preparan añadiendo a la masa un puñado de espinacas ya cocidas, bien exprimidas. Acompañados de un sabroso Ragú di Salsiccia (chorizos).

100 gr Sémola de trigo duro
2 Huevos
1 Cda Aceite de Oliva
1 Pizca de Sal
Ragú de Chorizo:
2 Chorizos (300 gr)
500 gr Pulpa de cerdo
600 gr de pulpa de tomate
1 Cebolla morada
1 Rama de Apio
1/2 Zanahoria
120 ml Vino tinto
3 Hojas de Laurel
Aceite de Olive, Sal y Pimienta
