Bourbon Baked Beans
Bourbon baked beans using brown sugar, molasses, Kentucky bourbon, ketchup, a bit of vinegar, spices, hickory liquid smoke, liquid Maggi seasoning, & Spam. I simmered the beans on the stove top until tender, then baked them with the other ingredients for another two hours at 350. Turned out rich, dark and full of flavor! We served it with barbequed pork tenderloin and a baked potato. We'll definitely try this recipe again!

2 lbs Italian Sausage - hot or sweet or use a combination of both 2 Tbsp Olive Oil 1 Large Onion - diced 4 Carrots - diced 4 Cloves Garlic - minced 1 Tbsp Tomato Paste 1 Tbsp Balsamic Vinegar 2 tsp Italian Seasoning 1 tsp Smoked Paprika 1 14oz Can Fire Roasted Tomatoes 1 15oz Can White Beans - drained & rinsed 1 C String Beans 6 C Chicken Stock or broth 2 Tbsp Fresh Parsley - chopped Salt & Pepper to taste 1 C Ditalini Pasta
To par boil sausages:
Add sausage links to a large skillet and fill halfway up with water. Cook sausage on medium to low heat poking the skin to release the fat. Par boil for 5 - 6 minutes on each side. Remove from pan and slice sausages.
Heat oil in a large stock pot or dutch oven, add onions cooking 2 - 3 minutes, add carrots cooking and additional 2 - 3 minutes. Add garlic stirring until combined. Add italian seasoning & smoked paprika, salt & pepper. Mix well. Stir in balsamic vinegar and tomato paste. Stir until all combined Add fire roasted tomatoes, white beans & string beans. Mix well. Add in sausages and pour in chicken stock. Add fresh parsley. Cover.
Simmer on low heat for 1 1/2 - 2 hours or until vegetables are cooked through. Add in pasta and simmer for an additional 20 minutes or until pasta is al dente.
