Strawberry Shortcake | Easy Recipe
Strawberry shortcake is the perfect summer dessert. A flaky biscuit topped with juicy fresh strawberries and mounds of whipped cream. Strawberry shortcake is not only delicious, but also easy to make. You could also use other fruits, like raspberries, cherries or peaches.
Ingredients (Makes 6 shortcakes)
Strawberries 1 lb (454 g)
Sugar 2 tbsp (25 g)
-Biscuits
Flour 2 ½ cups (300 g)
Sugar ¼ cup (50 g)
Baking Powder 1 tbsp (12 g)
Salt ½ tsp (3 g)
Butter, frozen, cubed ½ cup (113 g)
Egg 1 whole
Milk ½ cup (120 mL)
Heavy Cream 2 tbsp (30 mL)
Coarse Sugar 1 tbsp (10 g)
-Whipped Cream
Heavy Cream 1 ½ cups (360 mL)
Powdered Sugar ¼ cup (30 g)
Vanilla 1 tsp (5 mL)
Directions
1. Cut washed and hulled strawberries into quarters and toss with sugar; set aside.
2. Stir together flour, sugar, salt and baking powder.
3. Cut cold butter into flour mixture until coarse and crumbly.
4. Whisk together egg and milk. Stir into flour mixture and fold gently until a shaggy dough forms.
5. Pat the dough into a rectangle and fold into thirds like a letter (fold one end of the dough into the middle, then fold the other end over the first fold). Repeats two more times.
6. Pat dough to ¾ inch thick and use a bench scraper or knife to cut into 6 pieces. Brush with cream and sprinkle with coarse sugar.
6. Freeze biscuits for 30 minutes. Bake in a preheated 425º (218º C) oven for 14-16 minutes or until browned.
7. Whip heavy cream until frothy, add powdered sugar and vanilla and whip to medium peaks.
8. To assemble: cut biscuits in half, spoon strawberries onto bottom half, top with whipped cream and top of biscuit.

HEALTHY STRAWBERRY CAKE RECIPE
(makes 9 large pieces)
Ingredients:
For the homemade crackers:
2 cups ground oats, or oat flour (200g)
2 tbsp cornstarch
1 tsp baking powder
1/4 cup milk (60ml)
1/4 cup unsweetened applesauce (65g)
1 tbsp maple syrup
2 tbsp melted butter
For the cream filling:
1.5 cups Greek yogurt (375g)
1 cup heavy cream (240ml)
3-4 tbsp honey
1 tsp vanilla extract
For layering the cake:
1.5 cups sliced strawberries (200g)
1 medium sized banana
1/2 cup almond flakes (40g)
NUTRITIONAL INFO (per large square):
241 calories, fat 9.9g, carb 30.8g, protein 7.7g
Preparation:
1. Homemade crackers:
Preheat the oven to 350°F (180°C).
In a large mixing bowl, combine the oat flour, cornstarch, baking powder, milk, applesauce, maple syrup, and melted butter.
Stir the ingredients with a wooden spoon until the dough starts to form. Knead the dough a few times with your hand.
Thinly roll out the dough between two sheets of parchment paper.
Using a pizza wheel, cut the dough into rectangles.
Transfer with paper on a baking sheet and bake in the preheated oven for 20 minutes.
Allow the homemade crackers to cool completely.
2. Cream filling:
In a bowl, whisk together the Greek yogurt, honey, and vanilla extract until well combined.
In a separate bowl, beat the heavy cream until soft peaks form.
Gently fold the whipped cream into the Greek yogurt mixture, creating a creamy filling.
3. Layering the cake:
Spread a spoonful of the cream filling on the bottom of an 8-inch square brownie pan.
Place a single layer of homemade crackers on top of the cream, ensuring it covers the entire surface.
Spread another layer of the cream filling over the crackers.
Layer the sliced strawberries and bananas over the cream filling and sprinkle with almond flakes.
Repeat the process, alternating layers of oatmeal crackers, cream filling, sliced strawberries, bananas, and almond flakes.
Finish with a final layer of crackers and creamy filling on top.
4. Chilling and serving:
Cover the cake with plastic wrap and refrigerate for a few hours or overnight, allowing it to chill and set.
Once chilled, cut the cake into 9 equal squares.
Serve the cake with a few slices of strawberries or a drizzle of melted dark chocolate on top.
