How to Make Ground Beef Lettuce Cups
Ground beef cooked with shallot, ginger, lemongrass, and Sambal chili paste and served with crisp butter lettuce is a dynamite meal maker. Bonus, this Thai-style dinner is low on carbs, too!

INGREDIENTS:
1 pound Certified Angus Beef ® ground beef
2 teaspoons Canola oil
1 teaspoon salt
1/2 teaspoon pepper
1 small shallot, minced
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1 teaspoon fresh chopped lemongrass
4 scallions, sliced, separating white and green
1 tablespoon soy sauce
1 tablespoon Sambal Oelek chili paste
1 lime, juiced
1/4 cup chopped fresh cilantro
8 mint leaves, roughly chopped
1 large head butter lettuce, broken into individual leaves

In this video I'm going to show you how to make lettuce wraps!
I inspired from some of Thai food dishes that I had from Thai restaurant.
I made this for my hubby's lunch box (bento) one day and loved it so much!
It's one of my healthy recipes, and it's very very satisfied!

Thai Style Beef Lettuce Wraps Recipe
Ingredients
1 Tablespoon peanut oil or canola oil
3 Cloves garlic, finely chopped
1/2 Onion, chopped (About 1/2 cup)
1/2 Stalk fresh lemongrass, chopped OR substitute 1 Tablespoon frozen lemongrass
1 Tablespoons chopped ginger
1 lb. Lean ground beef (93/7)
Pinch of salt and pepper
2 Tablespoons fish sauce
2 Tablespoons chili garlic sauce
1 Tablespoon rice vinegar
1 Tablespoon sugar
5 oz. water chestnut, chopped
5 oz. bamboo shoot, chopped
3 Green onions, chopped (About 1/4 cup)
Sesame oil
2 Fresno chili pepper, chopped (Optional)
Freshly ground black pepper
Handfull fresh cilantro, chopped
Sesame seeds
1 lime cut into 6 wedges
1 head ice burg lettuce
Sweet chili sauce (Optional to serving with)
3 cups cooked rice (Optional to serving with)
Directions
1. Heat a large skillet over medium-high heat; Add oil and swirl to coat. Add garlic and onion saute 2 minutes.
2. Season ground beef with salt and pepper. Add beef to pan, and cook for 10minutes or until beef is browned .
3. Meanwhile combine fish sauce and next 6 ingredients (through chili garlic sauce) in a small mixing bowl, set aside.
4. When the meat is browned, add rice wine, let it evaporate about 2 minutes. Stir in water chestnut and bamboo shoot to pan and cook 1 minute. Add the fish sauce mixture cook 2 minutes or everything combine very well together.
5. Remove from heat, add green onion, and next 3 ingredients (through black pepper). Top with cilantro and sesame seeds. Serve with ice burg lettuce, cooked rice and sweet chili sauce.

Spicy Thai Beef Lettuce Wraps with Today's Modern Family! Noreen's Kitchen
Greetings! When my friend Diane over at the Today's Modern Family website asked me if I could make some video recipes for busy moms how could I refuse? With that in mind, today I did not decide what to have for supper until late in the afternoon when it was too late to actually thaw anything out. Since I didn't want to run to the store for meat, I did what everyone else would do, I thawed it in the microwave. I don't like to do that, but I did. Then I thought about what to do with that thawed lump of ground beef.
A quick look into my pantry and fridge unearthed a nice variety of ingredients to throw together this spicy Thai beef! I served this as a lettuce wrap with cucumber spears and steamed rice, but you don't have to eat it that way. You could just toss the rice and the beef in a bowl and have at it. It would also be nice wrapped in a warm tortilla with some plain yogurt drizzled on and some ribbons of fresh basil and chopped cilantro for a fresh bite. I think this would also be wonderful the next day on top of a bed of lettuce with a quickle of fresh cucumber and red onion for a nice bite. No matter what you choose to do with this beef, you are going to love it.
I have also cooked up some rice to go along with this, but if you are in a real hurry and don't want to mess with rice for a half an hour, then on your way home from work, just stop by your favorite Chinese place and order up two quarts of white steamed rice. They are happy to sell it to you and you can use it for a ton of things, not just this recipe!
If you cook on the weekends in preparation for your busy week like my mom does, you can easily throw this together, allow it to cool and store it in the fridge in an airtight container or zip top bag. Reheat in a hot skillet with a tablespoon of oil and then you're good to go. Cook up some rice while you are at it and cool and store in a zip top bag and throw it in the freezer, when you are ready to cook dinner on the designated night, just take out the rice you will need and steam it in the microwave or on the stove. Dinner fast and easy! You did all the work on the weekend and you don't have to worry about what you are going to have for supper.
