Turai Punjabi Wadi
Ingredients Quantity
Ridged Gourd (Turai) 3 No’s
Oil 3-4 Tbsp.
Punjabi Wadi 3 No’s
Oil Approx. 2 Tbsp.
Cumin Seeds 1 Tsp.
Green Chili slit 3-4 No’s
Onion Chopped 2 No’s Small
Ginger & Garlic Paste 1 Tbsp.
Tomato Cut in Cubes 4 No’s
Salt to taste
Turmeric Powder ½ Tsp.
Red Chili Powder 1 Tsp.
Coriander Powder 1½ Tbsp.
Garam Masala Powder 1 Tsp.
Water 4 Cups
Coriander Chopped 1 Tbsp.
Coriander sprig for garnish
Ghee 1 Tbsp.
Method:
1. Cut the head and bottom of the Turai and peeled them.
2. Cut the turai into cube size. Keep it aside.
3. Heat 3-4 tbsp of oil in a pan, add Punjabi wadi and fry till brown in color.
4. When Vadis are brown remove in a bowl and Keep it aside.
5. In same pan, add cumin seeds and green chillies, mix well and sauté till cumin splutter.
6. Add chopped onion, mix well and sauté for 2-3 min.
7. Add ginger-garlic paste, mix well and sauté for another 2-3 min.
8. Add tomato cubes, mix well and sauté for 1 min.
9. Add salt, coriander powder, red chilli powder, garam masala powder and turmeric powder, mix well and sauté for 6-7 min.
10. Add turai, mix well and sauté for 4-5 min.
11. Add water and mix well. Cover and cook for 8-10 min.
12. After 6-7 min. add fried wadiyan and mix well and cover and cook for another 3-4 min.
13. Add chopped coriander and mix well.
14. Remove in serving bowl, pour ghee on top and garnish with coriander leaves and serve hot.

green chillies 3 slit in two

Simple and instant Turai ki sabzi / Dodkyachi bhaji / sponge gourds recipe
Ingredients
2 Sponge gourds / Turai
4 spoon moong dal ( optional)
1 onion
1 tomato
1 tsp ginger garlic paste
5-6curry leave
1green chilli
Coriander leaves
Salt as per taste
3 spoon
1tsp jeera
2 tsp red chilli powder
1/2 tsp garam masala
Cooking time : 10min
Take a pan add oil; jeera ; curry leaves; green chilli ; onion
Now add tomatoes and ginger garlic paste. Add termeric powder ; red chilli powder ; garam masala and sponge gourd or Turai
Cook it on high flame for 4-5 min den add sooked moong dal and cook for 5-6 min . Garnish with coriander leaves.
HEALTHY MIXED VEGETABLE CURRY | BENGALI BHOGER LABRA RECIPE
Pujor Bhoger Labra - Bhoger Khichuri - Durga Puja Bhoger Khichuri Labra- No Onion No garlic recipe
This recipe is usually made during festival time and offered to the Goddess hence the name bhoger labra where bhog means the food offered to the Gods. After offering puja the food is distributed amongst everyone. I make this quite frequently though even on normal days as it is such a healthy recipe.
Ingredients required for making bhoger labra - Serves 8 to 10
Use any seasonal vegetables according to your preference and you do not need to stick to these proportions.
3 medium to small/235 gm potatoes
1 small/176gm sweet potato
2 medium /135 gm carrots
168 gm cauliflower
130 gm tindora or parval
1 medium/227 gm zucchini or ridge gourd(torai)
1 medium/126 gm radish(daikon or mooli)
half of small/250gm butternut squash/pumpkin
1 medium eggplant (brinjal )
1 medium to large tomato
green chillies 4 (adjust proportion according to preference)
1 dried bay leaf
2 dry red chilli (optional)
2 teaspoons panch phoron . Check out the video on panch phoron -
1 teaspoon heaped turmeric powder (haldi)
2 teaspoons salt or as per taste
2 teaspoons sugar
5 tablespoons oil
1 tablespoon ghee. How to make homemade ghee -
1/2 teaspoon Bengali Garam Masala powder. Check out the video on Bengali Garam Masala powder -
1/2 cup hot water if required
For making spice paste -
1 teaspoon ground cumin (jeera powder)
1/2 teaspoon red chilli powder (optional)
4 tablespoons water
2 teaspoons grated ginger
For making dry roast spice powder (bhaja moshla)-
1 teaspoon cumin seeds(jeera)
1 teaspoon coriander seeds(dhania)
1/4 th teaspoon whole black peppercorns. You can replace it with 1 teaspoon fennel seeds (saunf)
1 dry red chilli
1 dried bay leaf (tejpatta)
This is served with a rice and dal porridge called khichuri (link given below) along with fried eggplant, sweet tomato chutney and papadums.
I even have it with rice or chapati if I make it on a normal day.
