How To make Spiced Zucchini and Peas In Tomato Sauce (Torai Masala)
1/2 c Chopped red onions
3 Garlic cloves; minced
1 Celery rib; sliced
2 tb Canola oil
1/2 ts Tumeric
1/2 ts Cumin powder
3 c Cubed zucchini
2 1/2 c Tomato sauce
1 c Frozen peas
3 pn Cayenne pepper
Saute onions, garlic, and celery in oil for 2 minutes. Add tumeric, cumin and zucchini. Cook over medium heat for 5 minutes. Add tomato sauce, peas and cayenne pepper and cook until zucchini is tender, about 15 minutes. Per serving: 109 cal, 4 g prot, 51 mg sod, 15 g carb, 5 g fat, 0 mg chol, 67 mg calcium

सामग्री: Ingredients For Zucchini or Nenua chickpea vegetable
तोरई, तोरी या नेनुआ (Torai, Tori or Nanua) – 1 किलोग्राम
प्याज (Onion) – 1 (कटा हुआ)
साबुत लाल मिर्च (Whole Red chili)- 3 टेबल स्पून
जीरा (Cumin)-1/2 टी स्पून
लहसुन की कलिया (Garlic cloves) – 5 -6 ( बारीक़ कटी हुई )
काला चना (Black gram) – 1/2 कप ( 5-6 घंटे भिगोये हुए)
हल्दी पाउडर (Turmeric powder)- 1/3 छोटी चम्मच
सरसों का तेल (Mustard oil) – 3 छोटी चम्मच
नमक (salt) – स्वादानुसार

Turai Punjabi Wadi Recipe | कैसे बनाये तुरई पंजाबी वडी की सब्जी| Harpal Singh Sokhi recipes
Turai Punjabi Wadi
Ingredients Quantity
Ridged Gourd (Turai) 3 No’s
Oil 3-4 Tbsp.
Punjabi Wadi 3 No’s
Oil Approx. 2 Tbsp.
Cumin Seeds 1 Tsp.
Green Chili slit 3-4 No’s
Onion Chopped 2 No’s Small
Ginger & Garlic Paste 1 Tbsp.
Tomato Cut in Cubes 4 No’s
Salt to taste
Turmeric Powder ½ Tsp.
Red Chili Powder 1 Tsp.
Coriander Powder 1½ Tbsp.
Garam Masala Powder 1 Tsp.
Water 4 Cups
Coriander Chopped 1 Tbsp.
Coriander sprig for garnish
Ghee 1 Tbsp.
Method:
1. Cut the head and bottom of the Turai and peeled them.
2. Cut the turai into cube size. Keep it aside.
3. Heat 3-4 tbsp of oil in a pan, add Punjabi wadi and fry till brown in color.
4. When Vadis are brown remove in a bowl and Keep it aside.
5. In same pan, add cumin seeds and green chillies, mix well and sauté till cumin splutter.
6. Add chopped onion, mix well and sauté for 2-3 min.
7. Add ginger-garlic paste, mix well and sauté for another 2-3 min.
8. Add tomato cubes, mix well and sauté for 1 min.
9. Add salt, coriander powder, red chilli powder, garam masala powder and turmeric powder, mix well and sauté for 6-7 min.
10. Add turai, mix well and sauté for 4-5 min.
11. Add water and mix well. Cover and cook for 8-10 min.
12. After 6-7 min. add fried wadiyan and mix well and cover and cook for another 3-4 min.
13. Add chopped coriander and mix well.
14. Remove in serving bowl, pour ghee on top and garnish with coriander leaves and serve hot.
