How To make Spaghetti with Green Tomatoes

1 pound Green tomatoes
1 pound Spaghetti
5 Cloves garlic -- minced
3 tablespoons Extra-virgin olive oil
Salt/freshly ground pepper 1/4 cup Or more freshly grated
Parmigiano-Reggiano
Bring water for cooking the pasta to a boil in large pot. Drop in the tomatoes. Cook for about 15 to 20 seconds. Remove; let cool. Keep water boiling. Add 2 tablespoons salt and the pasta. As it cooks to al dente, peel, seed and coarsely chop tomatoes. Heat a skillet, add the olive oil, and in the oil cook the garlic until just softened and fragrant. Add tomatoes and increase heat. Cook 3 to 4 minutes or until the tomatoes start to get soft. Add salt and pepper to taste. Combine the cooked pasta with the tomato sauce, toss, add Parmesan and toss again. Enjoy! Overrun with green tomatoes? They need not go to waste, this recipe is the perfect way to use up the tomatoes quickly. It is a great recipe as you can switch the ingredients to whatever you happen to have to hand. It will store well in the freezer so that whenever you require salsa it can be whipped out and used however you like.
Ingredients below:
1kg green tomatoes
1 onion
3 cloves garlic
3 chillies
Juice of 1 lime (or lemon)
3 tblsp herbs of your choice - coriander, parsley, tarragon, oregano, thyme
1 tsp salt
1tsp black pepper
1 tblsp vinegar
1 tblsp sugar

• 8 ounces dry orzo pasta, substitute with any pasta variety
• 3 tablespoons olive oil
• 1 tablespoon minced garlic (3 to 4 cloves)
• 1/4 to 1/2 teaspoon crushed red pepper flakes, depending on how spicy you like the pasta
• 12 ounces tomatoes, chopped (2 medium or 12 to 15 cherry tomatoes)
• 1/2 cup shredded parmesan cheese, plus more for serving
• 1 cup basil leaves, torn into pieces
• Salt and fresh ground black pepper, to taste

15 Minute Garlic Cherry Tomato Pasta
Sauteeing garlic in olive oil until lightly golden and cooking tomatoes in that oil, until they burst, creates a flavorful and super simple sauce. The burst cherry tomato sauce goes perfectly with linguine or spaghetti. Top it with a handful of fresh basil leaves and good quality extra virgin olive oil and in about 15-20 minutes you'll have an awesome easy pasta recipe!
