Today you're going to see snickers bars going healthy.
This healthy snickers is completely made from natural ingredients, it's 100% refined sugar free, and so delicious and satisfying.

Here's the list of what I cover in this video.
First, to make the bottom layer of a snicker bar, we're going to use oats and almonds.
Next, for the caramel layer, the key ingredient are dates.
It's no bake dessert, so all you have to do is to bring all the ingredients together, spread into layers, and chill inside the freezer.
This homemade snickers can be coated with melted chocolate and that's it, but I wanted to do a little test.
What I did, is that I made three different chocolate layers, to see what works best.
So I went with: dark chocolate, cocoa glaze and chocolate peanut butter sauce.
Talking about the taste, I liked the cocoa glaze the most.

HEALTHY SNICKERS BARS RECIPE
(Makes 18 bars)
Ingredients:
1.5 cups ground oats (or oat flour) (150g)
1/2 cup almond meal (50g)
1/4 cup coconut oil (50g)
3 tbsp honey
2 cups dates (300g)
4 tbsp peanut butter
1 tsp vanilla extract
1/4 tsp salt
1/2 cup peanuts, dry roasted and salted (65g)
4 oz dark chocolate (80g)
NUTRITIONAL INFO (per bar):
228 calories, fat 11.6g, carb 29.6g, protein 4.5g
Preparation:
For the nougat layer, in a bowl, combine ground oats, almond meal, coconut oil and honey.
Spread the oat mixture into a 9 by 9-inch (22x22 cm) baking dish and put in the freezer for 30 minutes.
For the caramel layer, in another bowl add dates and cover with hot water. After 5 minutes drain the dates and reserve some sweet water.
In a food processor, add dates, peanut butter, vanilla and salt. Process until smooth, adding 1/4 cup (60ml) leftover date water.
Spread the date caramel over the oats. Sprinkle with the peanuts and lightly press the peanuts into a date mixture. Chill in the freezer for 1 hour.
Transfer the chilled mixture to the board and using a sharp knife cut into a bars.
Dip the bars into a melted chocolate and place back in the fridge for chocolate to fully harden.
COCOA GLAZE RECIPE
Ingredients:
1/4 cup cocoa powder (25g)
1/4 cup coconut oil (50g)
2 tbsp honey
Preparation:
In a small bowl, mix all the ingredients together into a smooth glaze.
CHOCOLATE PEANUT BUTTER SAUCE
Ingredients:
1 cup chocolate chips (150g)
1/2 cup smooth peanut butter (125g)
1/2 cup butter (100g)
Preparation:
In a small bowl, microwave all the ingredients until melted and combined.

Deep-Dish Snickers Pie

Ingredients
Six 1.56-ounce Snickers® candy bars, roughly chopped (about 2 cups), plus more for garnish
6 tablespoons unsalted butter, cubed
One 9-ounce package chocolate wafer cookies
1/2 cup dulce de leche
1/2 cup hot fudge sauce, warmed
1 cup crunchy peanut butter
One 8-ounce package cream cheese, at room temperature
1 cup confectioners' sugar
1 cup heavy cream
1/2 cup salted roasted peanuts, chopped
Directions
Preheat the oven to 350 degrees F.
For the crust: Melt 1 cup of the candy bars with the butter in a small saucepan over medium heat, whisking frequently, about 4 minutes.
Pulse the cookies in a food processor to fine crumbs. Drizzle in the candy mixture until the crumbs are completely coated. Firmly press the crumb mixture into the bottom and up the side of a 9-inch deep-dish pie plate. Bake until the crust is set, 10 to 12 minutes. Spread the dulce de leche over the warm crust with an offset spatula then drizzle with 1/4 cup hot fudge; set aside.
For the filling: Beat the peanut butter, cream cheese and sugar in a large bowl with an electric mixer on medium speed until combined. Whip the cream in a medium bowl with an electric mixer on medium speed until stiff peaks form. Fold the whipped cream into the peanut butter mixture until combined. Fold in the remaining 1 cup chopped candy bars. Pour the filling into the crust, evening out the top with a spatula. Drizzle with the remaining 1/4 cup hot fudge sauce.
Make a decorative ring around the edge of the pie (do not cover the crust) with more chopped candy bars, overlapping them slightly. Inside that ring, make a second ring with the chopped peanuts. Chill until set, at least 4 hours and up to overnight.

Turning A Snickers Bar Into An EPIC DESSERT!

Here’s what you’ll need:
Coffee Tart Shell
375g Flour
80g Sugar
5g Ground coffee
5g Freeze dried coffee
200g Unsalted butter, cold and cubed
1 Egg
1 Yolk
50g White chocolate melted
Tart ring 10cm x 2cm
Preheat the oven to 170C.
Combine flour, sugar, butter and ground coffee tea in a mixer with paddle attachment. Paddle until a sandy texture is formed. Slowly add in eggs until a dough is formed. Wrap in cling film and refrigerate for at least 30 minutes.
Roll chilled dough to 2mm thickness on a lightly floured surface and drape dough over tart ring on a lined baking tray. Tuck in the edges, cutting excess on the edges, prick the center a few times and blind bake for 15 minutes. After blind baking, bake for a further 15 minutes or until golden.
Once baked coat the inside of the tart with melted white chocolate and allow to set.
Caramelised Milk Chocolate Ganache
280g Milk chocolate
140g Milk
200g Thickened cream
1 Gelatine sheet (titanium grade)
Place milk chocolate in a baking tray lined with parchment paper.
Roast milk chocolate in the oven at 150C for 15 minutes.
Meanwhile bring milk and cream to a boil and then blend in roasted milk chocolate.
Add in gelatine. Mix until gelatine is fully dissolved.
Place ganache in a container and refrigerate until it is set. Once set, transfer ganache into a piping bag.
Peanut Butter Diplomat
Creme Patisserie (see recipe from my Moss video
175g Peanut butter
250g Thickened cream
Salt to taste
Blend peanut butter with creme patisserie while still hot then allow to set in the fridge. Once set transfer to a stand mixer with semi-whipped thickened cream and whip until light a fluffy. Season with salt.
Peanut & Hazelnut Praline
75g Peanuts
75g Hazelnut blanched
100g Caster sugar
Salt
Preheat the oven to 180C.
On a baking tray, place hazelnuts and peanuts scattered and roast in the oven for 15 minutes.
Meanwhile place sugar in a dry pot and caramelise to a temperature of 180C. The colour should be deep amber. Remove from heat.
Once nuts are baked, remove from the oven and pour into the caramel.
Transfer the caramel and nut mixture to a lined baking tray.
Allow to fully cool down, then break down to small pieces and place in a high speed blender.
Blend until mixture turns from crumbles to a wet oily paste, should take about 4-5 minutes of blending. Once the mixture is smooth, transfer to a container and store outside until needed
