2 Lemons 1 2/3 Cups sugar Pastry for double crust pie -- 8 inch 4 eggs 1. Slice lemons paper-thin, rind and all. Remove any seeds. place in bowl and add sugar. Mix until slices are well coated. Let stand overnight. 2. Next day, line 8-inch pie plate with half the pastry. Beat eggs well and fold into lemon-sugar mixtures. 3. Pour into curst. Seal with top crust. Cut vents to allow steam to escape. 4. Bake at 450 degrees for 15 minutes, then reduce heat to 375 and continue baking for 25-30 minutes, until knife inserted in center comes out clean. 5. Cool before cutting. Serve with whipped cream if desired.

When I say lemon pie, what comes to mind?
For me it had to be lemon meringue pie until just recently. But today I'd like to share a completely different lemon pie, the Shaker Lemon Pie.
This pie is unlike anything I've ever encountered. This is a unique recipe for a citrus pie that is closer in resemblance to apple pie than the chiffon or meringues that we grew up eating.

Shaker Lemon Pie and Bourbon Sidecar
In this episode Stacey and Jessica make Shaker Lemon Pie and Bourbon Sidecar
Shaker Lemon Pie
2 large lemons 4 eggs, well beaten 2 cups sugar Pie Dough for shell and top crust Slice lemons as thin as paper, rind and all. Combine with sugar and mix well. Let stand 2 hours or preferably overnight, blending occasionally. Add beaten eggs to lemon mixture, mix well. Turn into a 9-inch pie shell, arranging lemon slices evenly. Cover with top crust. Cut several slits near center.
Bake at 450 degrees for 15 minutes. Reduce heat to 375 degrees and bake for about 20 minutes or until a knife inserted near the edge of the pie comes out clean. Cool before serving.
Perfect Bourbon Sidecar
Rim a martini glass with sugar by wetting it with a lemon rim and dipping in sugar. To a cocktail shaker full of ice add a shot of bourbon, a shot of Cointreau and a shot of fresh squeezed lemon juice. Shake well and then strain into the martini glass.
