How To make Shake N Bake

1 ts PEPPER
1/4 c CANOLA OIL
1 tb ONION POWDER
2 ts SALT (OR OMIT)
1 tb GARLIC POWDER
1 tb PAPRIKA
1 tb BELL'S SEASON'G
2 ts GROUND CELERY SEED
Put the dry crumbs in a large bowl and mix the oil in thoroughly with a whisk or pastry blender. (When fully mixed through, you get a negligible amount per serving when coating anything.) Then mix in the rest of the ingredients. Use your imagination. You could make a 1/2 recipe and use Italian seasoning instead of Bells; add sesame or poppy seeds, lemon pepper, etc. It does need that little oil to stick to things and brown properly. The original recipe I adapted it from used much more oil. At least there is no MSG or other chemicals or preservatives in this. I keep mine in the freezer. It takes 45 min at 375 degrees to brown. HOMEMADE SHAKE N BAKE CHICKEN | RICHARD IN THE KITCHEN
In this video I show you how to make Homemade shake n bake chicken. Just as good as what you get in a box, but better. Seasoned chicken legs or thighs marinated in milk or butter milk and coated with a homemade shake n bake mixture of spices and herbs then baked in the oven until golden brown and crispy.
THIS RECIPE IS FOR 6 PIECES OF CHICKEN. i ADJUSTED THE AMOUNTS IN THE VIDEO FOR TWO PIECES SINCE IT'S JUST ME.
Shopping List:
6 chicken Legs or 6 thighs (bone in) This recipe will also work with skinless and boneless chicken.
1 tbsp. Canola oil or non-stick spray
2 cups whole milk or butter milk
Sprinkle of kosher salt and course black pepper for the chicken before marinading.
For the Shake n Bake Coating:
2 cups plain bread crumbs or Panko.
1 1/2 tbsp. corn starch
1 tbsp all purpose flour
1 tbsp. paprika
2 tbsp. kosher salt (if using table salt use 1/2 that much)
1/4 tsp. course black pepper
1/2 tsp. each of celery salt,garlic powder, onion powder
1/4 tsp. each of dried basil, dried oregano and dried thyme. (be sure to rub each one between two fingers to wake up those flavors)
Dollop of pico de gallo for garnish
Directions:
It's your choice whether to cut off the skin on the chicken or leave it on for more flavor. However, do trim off any excess fat.
Season both sides of the chicken with Kosher salt and course black pepper and place in a zip-lock bag or a bowl with a lid. Pour the milk or butter milk over the chicken covering it completely. Marinade in the fridge 1 hour to overnight.
Pre-heat the oven to 400 degrees.
Add the spices and herbs to an appropriate sized zip-lock bag or paper bag and shake to combine.
Add the marinaded chicken 1 or 2 pieces at a time to the bag and shake vigorously to coat the chicken. Repeat this step until all chicken is coated.
Line a sheet pan with foil and brush on a light coat of Canola oil. Or use non stick spray.
Place the chicken onto the pan and bake for about 40-45 minutes or until the internal temp reaches 180-185. NOTE: The chicken will be safe to eat at 165, however, cooking it to the higher internal temp assures the breakdown of fat and fibers, therefore making it more tender and flavorful.
NOTE: When checking the internal temp of the chicken make sure the probe is in the thickest part of the meat not touching a bone.
After cooking let sit for 5 minutes before serving.
Plate uip and garnish with pico de gallo.
