Jellyfish & Oyster Sauce Salad Chinese Style
Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
150g - 200g Jellyfish
120g Chinese Cabbage Heart
50g Red Pepper
50g Green Pepper
1 Spring Onion
2 Clove Garlic
10 Ginger
2 Tsp Malt vinegar
2 Tsp sesame oil
2 Tbsp Oyster Sauce
1 Tsp Sugar
Pinch of Salt
Method:
1. Cut the white part of the spring onion into thin threads
2. Cut the green and red peppers into thin threads
3. Cut the Chinese cabbage into thin threads
4. Cut half of the ginger into thin threads
5. Finely chop the remaining ginger
6. Place garlic into pestle and mortar, grind into paste
7. Place the oyster sauce into a small bowl, add sesame oil and mix
8. Add sugar and small pinch of salt, mix well
9. Add the finely chopped ginger, garlic paste and vinegar, mix well
10. Prepare 1 litre of cold water in a large bowl
11. Heat 1 litre of water in saucepan till see bubbles before reaches boiling point
12. Place jellyfish into the pan, stir and blanch for few seconds
13. Remove jellyfish from a bowl of cold water prepared to cool down for 2 of minutes
14. Remove the jellyfish from water, squeeze out excess water and place into a large bowl
15. Add the cabbage, peppers, spring onion, ginger threads into the bowl
16. Add the oyster sauce mixture and mix well
17. Place onto a dish, garnish and serve
