pasta of your choice, cooked, hot
Directions:
Heat a very large skillet, melt butter and oil and saute onion and garlic until translucent. Add sausage meat and spices to the onion mixture and cook on moderate heat for 10 to 15 minutes, or until the sausage is completely cooked. Add the cream and reduce by one-third. This should take about 5 minutes on moderate heat. Stir very frequently to insure it doesn't stick or burn. Taste, adjust seasoning with salt and pepper and whatever else you want to add. Pour over hot pasta and serve.

GORGONZOLA CREAM SAUCE PASTA PRINT RECIPE:
INGREDIENTS WITH GRAM AMOUNTS
1 pound (454 grams) rigatoni or penne, ziti, paccheri
4 tablespoons (57 grams) olive oil divided
3 medium shallots chopped
8 ounces (226 grams) frozen peas
1 pound (454 grams) bulk Italian sausage
6 ounces (170 grams) gorgonzola dolce
1 (240 grams) cup heavy cream
3 tablespoons flat leaf parsley minced
salt and pepper to taste
2 cups (470 grams) of reserved pasta water **will not need it all, but always good to save.**

Rigatoni with Spicy Italian Sausage in a Tomato Cream Sauce
Quick, easy, and delicious pasta dish that is more than suitable to serve dinner guests! Excellent dinner choice for people on the go that doesn't take a lot of time to prepare.
This is a winner for all those busy families that would love to sit down together, but don't seem to have the time. A two pan meal that is hearty and delicious that the whole family will love!
Ingredients
4 spicy Italian sausage links
1 pound mushrooms, sliced
2 garlic cloves, minced
2 tablespoons olive oil
1 24 ounce jar tomato sauce (Rao's Homemade is what I used)
1 cup heavy cream
1/2 teaspoon red pepper flake
1 teaspoon dried basil
1/2 cup dry white wine (optional)
1/2 cup fresh grated Parmesan Reggiano
2 tablespoons fresh chopped basil
1 pound rigatoni
2 tablespoons kosher salt (for pasta water)
Directions
Pierce each sausage link with three to four holes, then gently simmer in pot of water until internal temperature reaches 150-160 degrees Fahrenheit. Set aside to cool to room temperature.
Heat olive oil in sauté pan over medium heat and cook mushrooms until they have released their moisture and soften, 5-8 minute, stirring frequently. Add wine and continue until moist of the liquid has been reduced, 2-4 minutes longer.
Slice sausage links into 1/2 inch rounds and add to mushrooms. Add tomato sauce and heavy cream, pepper flakes and dried basil to sausage and mushroom mixture and stir to combine.
Add salt to boiling water and cook pasta per directions on box. When cooked, drain pasta and add directly to sausage, mushrooms and sauce mixture. Stir to combine. Add Parmesan and fresh basil and enjoy!
