ITALIAN SAUSAGE AND RICOTTA STUFFED PASTA SHELLS
These Italian Sausage and Ricotta Stuffed Pasta Shells are one of my favourite recipes to both make and eat. They're a crowd and family favourite and are a fun and easy take on lasagna. The filling is super flavourful made with wholesome and easy to find ingredients. But once you master the art of stuffing pasta shells, you'll see that they can be stuffed with absolutely anything.

But trust me, they're so easy to make that anyone can make them (get the whole family involved!) TO MAKE THESE DELICIOUSLY FILLING ITALIAN SAUSAGE AND RICOTTA STUFFED PASTA SHELLS, YOU WILL NEED:
1 (12-14 ounce) box Jumbo Pasta Shells
3 cups Mozzarella Cheese, grated
2-3 cups Marinara Sauce
1 (475g) tub Ricotta
1 pound Italian Sausage (mild, medium or hot)
1 Egg
1/4 cup Parmesan Cheese, plus more for sprinkling and serving
2 tbsp Fresh Chopped Parsley, plus more for garnish
1 tbsp Extra Virgin Olive Oil, plus more for drizzling
Salt and Pepper, to taste

Beef and Cheese Manicotti
This authentic Italian manicotti recipe is easy to assemble and full of classic flavors. Make this comfort food meal in just under an hour!

Ingredients
14 manicotti pasta shells (8 ounce package)
3 cups spaghetti (marinara sauce)
2 tbsp butter cut into pieces
Filling
4 tsp olive oil
1 medium onion diced
2 garlic cloves minced
1/2 lb ground beef
1/2 lb ground pork
1/2 tsp salt
1/2 tsp black pepper
15 oz whole milk ricotta cheese
3 1/2 cups mozzarella shredded, divided
1 cup Parmesan cheese grated, divided
1/4 cup fresh Italian parsley chopped
1/4 tsp ground nutmeg
Instructions
In a skillet over medium heat, add 2 teaspoons of the olive oil, onion, garlic and ground beef and pork. Season with salt and pepper. Brown the meat and the onion, about 5 minutes. Remove from the heat, and cool to mix with cheese filling.
Cook the manicotti in a large pot of heavily salted boiling water for 6 minutes. Drain and gently toss with a little olive oil to keep from sticking and allow to cool.
Combine ricotta cheese, 2 cups mozzarella cheese, 1/2 cup Parmesan, parsley and nutmeg.
Mix well and stir the cooled meat mixture into the cheese mixture. Set aside.
Preheat the oven to 350°F.
Drizzle the remaining 2 teaspoons of oil in a 13x9 baking dish to coat. Spoon 1 1/2 cups of the spaghetti (marinara) sauce over the bottom of the dish.
Either place all of the meat/cheese mixture in a Ziploc bag and cut off one corner to squeeze filling into shells, OR carefully spoon filling in each manicotti by hand.
Arrange in a single layer in the prepared dish and spoon the remaining sauce over. Sprinkle the remaining 1 1/2 cups of mozzarella cheese and remaining 1/2 cup of Parmesan over the stuffed pasta. Divide the butter pieces evenly over top.
Bake the manicotti, uncovered, for about 30 to 35 minutes. Let the manicotti stand 5 minutes before serving.

BEEF & ITALIAN SAUSAGE STUFFED MANICOTTI
INGREDIENTS
1 Pound box of Manicotti Shells
1 Tablespoon of Olive Oil
1 Pound of Ground Beef
1 Pound of Hot Italian Sausage
1/2 Red Onion Chopped
1/2 Green Bell Pepper Chopped
7 Cloves of Fresh Garlic Chopped
1 Teaspoon Sea Salt
1 Teaspoon Granulated Garlic
1 Teaspoon of Granulated Onion
1 Tablespoon Sugar
1 Pack of Spaghetti Season Mix
1 Cup of Tomato Puree
1 Jar of Pasta Sauce (any kind will do)
1 – 15 - ounce carton Ricotta Cheese
1 – 6 - ounce Bag of Parmesan Cheese
1 Pack of fresh Mozzarella Cheese
1 - 6 or 8 - ounce Bag of Shredded Mozzarella Cheese
DIRECTIONS
Preheat over to 350F degrees
In large skillet, brown ground beef and sausage, drain if too much oil, then add onions, bell peppers, fresh garlic cloves, the add granulated onion, granulated garlic, salt, tomato puree, spaghetti season and sugar. Mixing well to combine all ingredients.
In medium bowl mix ricotta cheese, parmesan cheese and shredded mozzarella cheese combine with meat mixture and set aside. Meanwhile boil water for pasta, add 1 teaspoon of salt and a tablespoon of olive oil to boiling water, add manicotti and cook for 7 minutes and drain, let cool before stuffing.
In 13x9 casserole dish coat bottom with pasta sauce. Using a piping bag fill manicotti and add to baking dish, then pour pasta sauce over manicotti and add parmesan cheese, bake at 350F degrees covered with foil for 20 minutes, then uncover and bake for another 20 minutes until cheese is nice and bubbly. Enjoy!
