Our family just came back from a trip to beautiful southern Missouri to canoe down the Current river, swim in the ice cold water and take in the bluffs and wild horses. Safe to say we're still enjoying the last bits of summer.
I'm not really ready for it to be over, but the cool morning temps and shorter days remind me that the seasons are changing.
The open signs are out on all the you-pick apple places in our area and a few local farmers have a stand set up at the end of our street.
Fall is definitely upon us.
All things Sourdough
If you know me well, you know I love my sourdough. I use it to make our Saturday morning pancakes, whole grain bread and tortillas.
If you are coming over from one of the other bloggers in this apple recipes blog hop, you may wonder what the heck I am even talking about!
Why sourdough
Before yeast was isolated and sold in little packets, sourdough starter was a valuable commodity in homes and families, passed down for generations.
Have you ever heard of phytic acid? Basically, its an antinutrient found in grains, beans and nuts that interferes with the absorption of certain nutrients. They are present on grains to keep them from spoiling.
There is a reason they are there, but there is also good evidence that our bodies weren’t meant to handle them. Proper preparation of grains eliminates most, if not all, of the phytic acid in offending foods.
This is the very reason traditional cultures soaked and fermented their grains, seeds and beans. These days we’ve lost that art. And, what have we found? People can’t handle grains anymore.
Instead of using instant yeast packets, people in traditional cultures leavened their bread with a fermented starter that captured all the yeasts in the environment.
AKA Sourdough starter.
Locally made sourdough starter, with the native yeasts of the area present, is certainly the thing a foodie’s dreams are made of. A jar of healthy, productive starter is teaming with life, as evidenced by all the bubbles you will see rising to the surface.
Once you’ve experienced homemade sourdough baked goods, store bought breads and pancakes simply don’t cut it. Sourdough has a depth of flavor that just can’t be found in something made quickly with a packet of instant yeast.

What??? A Homemade Sauerkraut Cake?

When I first did this recipe I questioned how it would taste BUT it is an amazing homemade cake. Try something new! Yes you will be pleasantly surprised at this moist wonderful cake.
Cake recipe:
1/2 cup Butter
1 1/2 cup Sugar
Cream together.
3 Eggs
Add eggs one at a time mixing.
1 teaspoon Vanilla
1 teaspoon Baking Soda
1 teaspoon Baking Powder
Mix into batter.
1/2 cup Cocoa
2 cups Flour
1 cup water
Add alternating dry ingredients with water.
1 cup Sauerkraut drained and rinsed twice
Chop up sauerkraut, mix into batter.
Pour into 2 9 inch greased and floured pans. Bake at 350 degrees for 30-35 minutes.
Frosting recipe:
10 oz Chocolate Chips (I used chocolate and mint chips)
6 tablespoons Butter
Melt together. Pour into larger glass bowl or mixer.
3/4 Cup Sour Cream
Blend into mixture.
1 teaspoon Vanilla
Dash of Salt
Mix together with frosting.
2 1/2 - 3 cups Powdered Sugar
Blend to make a thick but spreadable frosting
Frost cake when cooled. Enjoy!

Kicked Up Apple Cake Rising Sun Pepper Farm Recipe
Annette demonstrates a simple recipe for a spicy apple cake. This home cooked dessert is the perfect food to share with friends at a party.
Kicked Up Apple Cake Recipe
Ingredients:
6 Red Delicious Apples
1/2 pound butter
4 eggs
3 cups wheat flour
2 1/4 cup brown sugar plus 5 Tbsp brown sugar
2 tsp cinnamon
3 tsp baking powder
1/4 cup orange juice
2 1/2 tsp vanilla
3 Tbsp RSPF Apple Cinnamon Chipotle X Hot hot sauce
1. Slice and peel apples. Put in a large bowl.
2. Mix 5 Tbsp brown sugar and the cinnamon. Toss into the apple slices, set aside.
3. In a large mixing bowl cream butter and 2 1/4 cups brown sugar.
4. Add the eggs one at a time, beating well after each addition.
5. In a separate bowl, lightly stir the baking powder into the flour.
6. Add flour mixture alternately with the orange juice to the butter mixture.
7. Fold in the vanilla and hot sauce.
8. Spray a 9 x 13 inch baking pan.
9. Spoon and spread 1/3 of the cake batter into the baking pan. Layer 1/2 of the apples on top. Repeat layers ending with cake batter.
10. Bake at 350 degrees fahrenheit for 1 1/2 hours. Test for doneness and cool.
11. Serve with whipped cream or vanilla ice cream. Enjoy!
