The Recipe: 3-3 1/2 pound beef roast 2 cups vinegar (cider, malt, wine or white) 2 cups water 1 1/2 Tbs salt 1-2 tsp, whole peppercorns 12 whole cloves 1-2 tsp ground nutmeg 1-2 tsp ground ginger 1 small bunch green onions 5-6 cloves garlic, cut in large chunks 3-4 bay leaves 12 gingersnaps Carrots, potatoes, rutabagas or veggies of your choice Place all ingredients except gingersnaps and vegetables in a large ziplock bag and let marinate 5 days in the refrigerator. Remove meat from brine and place in an enameled pan or glass baking dish. Strain the brine and pour over meat until almost covered. Add carrots or other vegetables and cover. Bake at 300 degrees F for 2-2 1/2 hours. Add crushed gingersnaps and cook another 10-15 minutes until gravy thickens. Serve.
