The Recipe: 3-3 1/2 pound beef roast 2 cups vinegar (cider, malt, wine or white) 2 cups water 1 1/2 Tbs salt 1-2 tsp, whole peppercorns 12 whole cloves 1-2 tsp ground nutmeg 1-2 tsp ground ginger 1 small bunch green onions 5-6 cloves garlic, cut in large chunks 3-4 bay leaves 12 gingersnaps Carrots, potatoes, rutabagas or veggies of your choice Place all ingredients except gingersnaps and vegetables in a large ziplock bag and let marinate 5 days in the refrigerator. Remove meat from brine and place in an enameled pan or glass baking dish. Strain the brine and pour over meat until almost covered. Add carrots or other vegetables and cover. Bake at 300 degrees F for 2-2 1/2 hours. Add crushed gingersnaps and cook another 10-15 minutes until gravy thickens. Serve.

These German Meatballs in a creamy sauce with capers is called Königsberger Klopse and though people are diverted about the capers in it, it is a German classic and known all over the world. Leave the capers out, if you don't like them, it will still taste great.

German Meatballs

1+ lb Ground Pork 12 Ginger Snaps - finely crushed 1/4 C Onions - finely diced 1/4 C Water 1/2 tsp Salt 1/4 tsp Pepper 12 oz Bag Extra Broad Egg Noodles 1 can Campbell's Condensed Beef Broth 1/3 C Apple Cider Vinegar 1 Tbsp Sugar
Crush ginger snaps in a large plastic bag.
You can make the noodles at any time and cover until used.
Line a baking sheet with foil and place a baking rack on top. Spray with cooking spray and set aside.
In large bowl mix pork, 1/3 C ginger snaps, onions, water, salt & pepper. Shape into 24 small balls and place on rack. Bake uncovered 20 - 25 minutes.
In a medium size pot (2-3 qts) mix beef broth, apple cider vinegar, remaining ginger snaps and sugar. Cook over medium heat stirring constantly until mixture thickens & boils. When meatballs are ready remove from rack and stir into sauce.
Serve over noodles.
