How To make Santa Fe Chicken& Rice
1 bag Success white rice
vegetable cooking spray 3/4 pound seasoned chicken tenders
8 ounces mild salsa
1 can drained Mex-corn, (11-oz.)
1 can black beans, (15-oz.)
1/2 cup shredded Monterey jack cheese
1. Prepare one bag of Success white rice according to package directions. 2. While rice is cooking, spray skillet with vegetable cooking spray and heat. Add chicken tenders, cook on medium heat until chicken is no longer pink. Stir in salsa, corn, rinsed black beans and cooked rice. 3. Sprinkle with jalapeno Monterey jack cheese. Heat until cheese is melted. Serves 4.

This is wonderful dish to prepare ahead of time. You prepare the stuffing and chipotle in adobo cream sauce, then assemble the finished dish and heat 10-15 minutes before serving. I serve it with cilantro rice and a tossed salad: prepare the rice according to directions and add ½ cup chopped fresh cilantro to the rice 5 minutes before it is fully steamed and cooked. I often place the chicken bundles in the middle of a large platter and surround with the cilantro rice. The presentation is impressive and beautiful! The smokiness of the chipotle in adobo contrasts with the creamy sauce to produce a Southwestern explosion of tastes.

Ingredients used
santa fe chicken:
- chicken breasts
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon onion powder
- oil
- herdez salsa verde
- 1/2 cup santa fe tortilla strips
- 2 cups of shredded cheese
- 1 tomato (optional)
spanish rice:
- instant spanish rice
- instant chicken rice
- 1 can of black beans
- 4 cups of water
- oil/butter
elote:
-2 bags/cans of corn
-3 tablespoons mayo
- 1/2 tablespoon tajin
- 2 tablespoon parmesan cheese
limeade:
-3 1/2 limes
-1 cup of sugar
-water

Santa Fe Seasoning (recipe below)

¼ cup chili powder
¼ cup ground cumin
¼ cup paprika
1TB black pepper
2TB ground coriander
1 TB cayenne pepper
2 TB garlic powder
1 TB crushed red pepper
2 TB kosher salt
2 TB dried oregano
Combine all ingredients into a mixing bowl. Stir until blended with a whisk. Store in an airtight
container at room temperature.
Santa Fe Chicken
Sometimes, I can be pretty obsessed with my slow cooker. I love making big batches of delicious meals and then freezing half to enjoy later. It helps me save time and my family gets to enjoy a large variety of tasty dinners!
I originally saw this recipe while I was watching How Jen Does It on YouTube. She has some really amazing slow cooker recipes and this one really stuck out for me.
I've changed a couple of things in her recipe based on my family's preferences and simplifying it to make it an even quicker dinner time option.
A little tip when cooking in your slow cooker, spray it with nonstick spray first so that things don't stick. Nothings worse than saving the time cooking only to find yourself spending considerable time scrubbing over the sink after.
I suggest serving this chicken over rice and topping it with sour cream and perhaps a little shredded cheese. You can use brown or white rice, whichever you prefer.
Santa Fe Chicken Recipe
2 Boneless, Skinless Chicken Breasts
10 oz. Broth (Chicken, Turkey, or Vegetable)
1 can Black Beans
1 can Diced Tomatoes
1 1/2 cups or 1 can Corn
2 Tbsp Cilantro
1 1/2 Tbsp Minced Garlic
2 tsp Onion Powder
2 tsp Cumin
1 tsp Salt
1 1/2 Tbsp Cayenne Pepper (optional)
Directions
1. Spray cooker with nonstick spray. Add chicken.
2. Add the broth followed by the rest of the ingredients.
3. Stir very gently.
4. Cook on high for 6 hours or low for 10 hours.
5. About 30 minutes before it's done, use 2 forks to shred the chicken. (If you're serving this with rice, now is a great time to cool it as well.)
6. Serve with sour cream and/it cheese and enjoy!
