How To make Sadza (Corn Porridge)
Stephen Ceideburg 4 c Water
2 1/2 c White cornmeal
Bring 3 cups of the water to a boil in a large pot. Combine 1 1/2 cups of the cornmeal with the remaining 1 cup water. Reduce heat to medium-low and add the cornmeal mixture to the boiling water, stirring constantly with a wooden spoon. Cook for about 5 minutes, slowly adding the remaining cup of cornmeal. When the mixture is very thick and starts to pull away from the sides of the pan, transfer to a serving bowl or plate. Use a wooden paddle or spoon to compress the mixture into a round shape (you may use wet hands to aid in the procedure). Serves 6. PER SERVING: 210 calories, 5 g protein, 45 g carbohydrate 1 g fat (0 g saturated), 0 mg cholesterol, 0 Mg sodium, 4 g fiber. From an article by Karola Saekel in the San Francisco Chronicle, 8/18/93.

Aloha amigos (Hello friends).
Ingredients:
• 1.7 litres of boiling water
• 780 grams of Maize meal (Reserve 80g of maize meal, to thicken the porridge with water)
• 3 cups of cold water (each used separately)
• 2 tbls of salt (each used separately)
• 4 tbls of butter
• 4 tbls of peanut butter
• 180 ml of cold milk (Reserve 50 ml of cold milk to add to the porridge, once it has been dished)
• 40 grams of Sweetend Condensed milk
• 1 sliced banana (optional)
• 25 grams of Chia seeds (optional)

Approximate measurements:
1 cup mealie-meal (milled/ground dry corn),
2 tablespoons sugar,
Pinch of salt,
1/2 cup cold (room temperature) water,
1.5 cups boiling water,
1 tablespoon butter / margarine
Utensils:
1 casserole dish (with lid) or any microwave oven-safe dish/bowl with a lid - - avoid using plastics in the microwave oven,
1 wooden spoon
Optional (for serving):
Full cream milk,
Fresh cream,
Some peanut butter, or
Fresh bread cubes
