Salisbury Steak - TV Dinner Style - Food Wishes
Back when I was a kid, and our parents didn’t have time to make a meal, we’d get to enjoy something called a TV dinner. They weren’t that good, but we didn’t care, since we got to set up our specially designed trays, and eat in front of the screen. One of the most popular TV dinner entrees of that era was the Salisbury steak, and this is my not-too-modern take on that classic dish. Enjoy!

Salisbury Steak with Mushroom Gravy
This hamburger steak recipe features flavorful beef patties with rich mushroom gravy on top. Make this hearty dinner from scratch in just 30 minutes!

Ingredients
1 lb ground beef
1/4 cup onion diced (See Note 1)
1 egg beaten
2 tbsp ketchup
2 tbsp dijon mustard (separated)
2 tbsp Worcestershire sauce (separated)
1/3 cup Panko bread crumbs
1 tsp salt
1/2 tsp ground black pepper
2 tbsp bacon fat or olive oil (separated)
1 large onion sliced thin
8 oz mushrooms sliced
2 tbsp flour
2 cups beef broth
parsley to garnish
Instructions
In a bowl combine the ground beef, onion, egg, ketchup, one tablespoon of mustard, one tablespoon of Worcestershire sauce, Panko breadcrumbs and salt and pepper. Knead by hand until combined. Form into 4 oval patties to give them a steak appearance (See Note 2).
Heat a cast iron pan or large skillet until very hot. Add 1 tablespoon of bacon fat or oil and then patties. Sear patties to a crispy brown, 3-5 minutes per side. Remove from pan and set aside on a paper towel lined plate and cover to keep warm or a casserole dish if serving later.
Add the other tablespoon of bacon fat or oil to the pan and sauté the onion until golden brown over medium heat. Add the mushrooms, remaining tablespoon of mustard and Worcestershire sauce and cook for several minutes. Mushrooms will release water so cook mixture down for several minutes. Season with salt and pepper.
Sprinkle flour over all and stir, cooking for another minute. Slowly add the beef stock, stir to mix and bring to a boil. Lower heat to simmer for several minutes, sauce will thicken. Season to taste.
Add the “steaks” back to the pan, cover and cook for 2-3 minutes to heat through. If in casserole dish to serve later: cover and cook 10 minutes in 350°F oven to heat through.
Serve over mashed potatoes and pour mushroom onion gravy over each salisbury steak. Sprinkle with parsley to garnish.
Notes
1. You can also substitute 1 tablespoon onion powder for the 1/4 cup diced in the patties.
2. Also, use your thumb or index finger to make a little indention in the middle of each hamburger steak. This will help them lay flat rather than rising up in the middle like regular hamburgers typically do

DELICIOUS Salisbury steak with a rich, tasty onion and mushroom sauce
#shorts Salisbury steak is classic comfort food that is easily made at home. I’m unsure why it’s called “steak” as it’s actually a patty or a burger. I suppose it’s the oval shape resembling a steak. The key to making the perfect Salisbury steak is to start with high-quality meat. Look for steaks that are well-marbled and have a good amount of fat, usually 20 per cent fat. Beef chuck works well, have your butcher ground it (mince) for you on the medium fine setting. The bacon is optional, but I like the hickory smoked bacon to add that smoky flavour. But you can leave that out.
Cooking the perfect Salisbury steak is all about achieving the right balance of flavours. The beef should be well-seasoned, and cooked to perfection, with a juicy interior and a slightly crisp exterior. You want a good crust on each side. Using a home made stock made by roasting beef bones and vegetables, is the secret to a delicious meal. Of course, you could buy the stock, or use stock powders. It will still be delicious but not top level. #shorts

For the steaks
1 1/2 pounds (680g) ground chuck
1/4 cup (60g)milk
1/2 cup (60g) Italian seasoned breadcrumbs
1/3 cup (30g) onion - grated
4 cloves garlic - grated
1 tablespoon (17g) Dijon mustard
1 tablespoon (15g) Worcestershire sauce
1 teaspoon (6g) salt
1/2 teaspoon (1g?) black pepper
2 large eggs - beaten
For the mushroom gravy
1 tablespoon (14g) olive oil
1 pound (454g) mushrooms - sliced
1 large onion - sliced
1/2 cup (120g) dry red wine
3 tablespoons (43g) butter
2 tablespoons (15g) all-purpose flour
2 cups (480g) low-sodium beef stock
1 tablespoon (17g) Dijon mustard
2 teaspoons fresh thyme leaves
2 tablespoons (30g) Worcestershire sauce
salt and pepper - to taste
