Rum Cake is the most tender, moist, and mouth-watering cake that is drenched in rum flavor that balances the sweetness.
The best part, this marvelous cake is completely made from scratch, interesting, right?
The use of Dark Rum adds a nice smoky and intense flavor in the cake, which makes it irresistible. It also makes this cake flavorfull, moist, and adds a tender crumb to your cake.
The base of rum cake is prepared using all-purpose flour and other basic ingredients that are used to make a cake. It is then drenched in a rum syrup, which creates the magic. The rum syrup is made using dark rum, butter, sugar syrup, and water.
Not only house parties, but this also is a delightful dessert to serve for weekly family dinners, fancy dinner parties, or Christmas/holiday celebrations. Also for birthday parties, maybe just for adults. HAHA!

Ingredients
This old school sponge cake is made with regular ingredients such as,
Dark Rum – This is the star ingredient, that makes this rum cake unique and different from others. It has a bold rum flavor, that tastes just amazing with the moist and spongy cake.
Make sure to use a good quality rum for the best taste.
You can use any dark rum you like the most for this cake. I used Old Monk which is my all-time fav dark rum.
You can also use Bacardi dark rum or Meyer’s dark rum. Spiced rum-like captain morgan or coconut rum like Malibu also works well in this recipe. You can also use half malibu and half white rum or only white rum to make this cake.
Walnuts – To add a little crunch, I have added walnuts. You can also go for pecan or even almonds.
Other Ingredients – Other Than dark rum, we will need basic ingredients required for baking a cake, such as – all-purpose flour, corn starch, baking powder, unsalted butter, granulated sugar, eggs, milk, and vanilla extract.
You can also use other flour such as whole wheat flour for a healthy alternative, but the taste and texture will differ a bit.
Baking Powder helps the cake to rise. You can also substitute eggs with other ingredients such as yogurt, applesauce, ground flax seeds, etc for an eggless version.
You can also add orange zest or lemon zest in this cake batter, to make it extra taste and flavourful.

1/2cup 100g salted butter
1/2cup or 100g brown sugar
2 eggs
1tsp vanilla essence
40g almonds flour
1/2cup or 100g refined flour
70g chopped dry fruits
1/2 tsp cinnamon powder
1/2 tsp ginger powder
1/8 tsp nutmeg powder
1/2 tsp baking powder
200g soaked dry fruits

1 3/4 cups all purpose flour
5 eggs
2 sticks /1 cup butter
4 cups fruits
2 tsp baking powder
1 1/4 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp clove
1 tbsp vanilla extract

2. 100 grams flour
3. 100 grams unsalted room temp
4. 100 grams brown sugar
5. 2 flax eggs (which is our egg substitute) or 1/2 cup applesauce or 2 actual eggs
6. 40 grams ground almonds
7. 50 grams of dry fruits (walnuts, cashews, pistas, etc)
8. Orange zest 1 tsp (optional)
9. 1/2 tsp cinnamon powder (optional)
10. 1/4 tsp nutmeg or any spices of choice (optional)
11. Vanilla essence - 1 tsp (optional)

With Christmas just around the corner, its time to soak in the goodness of rum-soaked fruits along with the flavourful mix of cinnamon, nutmeg and orange zest. Plum cake is something that serves the purpose. So today I am going to share with you the recipe of plum cake loaded with fruits, almonds and spices which will leave you wanting for more

What you will need:
Soaked dry fruits: 1 cup
Eggs:3
Maida: 1 cup
sugar: 3/4th cup
Butter: 3 tbsp
Baking powder: 1 tbsp
Baking soda: 1 pinch
Orange peel: 2 tbsp
Nutmeg: 1 pinch
Ginger powder: 1 tbsp
Cinnamon powder: 1 tsp
Mixed dry fruits: 1 cup
How to prepare:
• Take a pan or kadhai and on medium heat, melt two tbsp of sugar slowly.
• It will first melt and then turn into dark brown. Keep stirring and let it turn into deep dark caramel colour but don’t burn it.
• Add ¼ cup of water slowly in batches and keep stirring. Don’t add all the water at one time as the sugar will harden.
• Once all the sugar dissolves, turn off the heat. This will take around 10 mins.
• I had soaked some dry fruits in Rum 15 days back and its ready now. Take 1 cup of soaked fruits and nuts that you prefer.
• I have taken some almonds, walnuts and cashew for the cake.
• Take 3 tbsp of unsalted butter and whip it till soft and fluffy. Now add 3 eggs one at a time and whisk till it becomes soft and creamy.
• Once this is done add ¾ cups of powdered sugar slowly to mix well. I have mixed the sugar well and now I will add 1 cup of maida or all purpose flour.
• Add 1/3rd cup of cocoa powder, 1 tablespoon of baking powder, a pinch of baking soda. Mix all the ingredients and sieve so that there are no lumps in it.
• Now to this batter add 1 tsp if cinnamon powder, 1 tsp of ginger powder and a pinch of nutmeg. Nutmeg adds a wonderful flavour to the cake so don’t skip this.
• Gently fold in the dry ingredients and mix until everything is well combined and there are no large flour pockets in the batter. Do not over mix at this stage.
• Keep a small portion of the soaked dry fruits aside and fold in the rest along with the caramel, chopped walnuts, almonds and cashews in the batter.
• I am adding some orange zest to the batter. Please remember not to use the white part of the orange as it will add a bitter taste to the cake. Mix lightly. Decorate it with some cashew on top
• Now I will grease a pan and add butter paper at the bottom. Here I will sprinkle some flour so that the cake comes out clean.
• Now transfer the batter to the prepared cake pan and gently tap to remove any air bubbles. I am not using my oven today.
• Here I have my unused pressure cooker which I have pre-heated on the gas. Insert the pan and bake it for 45 mins by maintaining the temperature.
• First keep the flame on high for 10 mins and then reduce it to medium for 20 mins and then bake it at low flame for 15 mins.
• Please follow this to bake the cake perfectly, else you may burn the cake.
• After 45 mins insert a skewer and check it if comes out clean. Once it is done let it cool and top the cake with the leftover soaked fruits.
• Your Christmas plum cake is ready to serve.
