How To make Roni's Chocolate Chip Cookies
1 1/2 c All-purpose flour; unsifted
1 ts Baking soda
1 ts Salt
1 ts Hot water
1 c Shortening; * see note
7 oz Chocolate chips
3/4 c Brown sugar, packed
2 c Oats, rolled (raw)
3/4 c Sugar
1 ts Vanilla extract
2 Eggs; * see note
1 c Chopped nuts; * see note
Cream shortening and sugars. Add eggs, one at a time, beating well. Dissolve soda in hot water and add. Next, add flour and salt (sifted together), a little at a time. Up to this point, mixing can be done with an electric mixer. Now, mixing by hand, add oats, choc. chips, vanilla and (nuts, if desired). Mix well. Shape into slightly flattened walnut sized balls with wet hands. Place on ungreased cookie sheet and bake at 350 degrees until browned. Remove to rack at once. Cooking time will be 10 - 12 minutes for chewy and about 15 min for crunchy. VARIATIONS Two more ways to make RONI'S CHOCOLATE CHOCOLATE CHIP COOKIES A: 2 TBsp more shortening 4 TBsp Cocoa (added with flour) B: 2 sq melted chocolate add to sugar, shortening and egg mix. NOTES: * or butter/margarine ** or quick oats *** or egg substitute **** we use walnuts. The astericks indicate substitutes my brother has worked out which reduce the fat and cholesterol. Identical twin sisters Joy Paoletti and Judy Vig grew up in a large Italian family, and delicious home-cooked meals were the centerpiece of their upbringing. As adults, they went on to make a career out of their love for cooking. Joy and Judy wrote cookbooks, appeared on various shows on The Food Network and were well on their way to becoming big names as TV chefs. But in September 2012, their lives changed forever.
Judy was diagnosed with Stage 2 breast cancer. Devastated but determined, the sisters jumped into action mode. Judy underwent four months of chemotherapy and six weeks of radiation. She quickly learned that chemotherapy would require her to keep a much stricter and healthier diet. But Judy still craved the decadent Italian dishes she’d grown up enjoying. That’s when the sisters had an idea— they would recreate their family recipes using healthier ingredients.
I'm a cookie monster...I love cookies and I love desert, confessed Judy. We're going to do a healthier twist on the Chocolate Chip cookie recipe because when you're going through Chemo, you're supposed to eat very healthy.

100g butter (room temperature)
65g sugar (1/3 cup)
80g brown sugar (1/3 cup)
1 egg
1 tsp vanilla extract
240g all purpose flour (1 cup)
35g cocoa powder (1/4 cup)
1/2 tsp baking soda
1/2 tsp kosher salt
100g dark chocolate chunks/ chips
200g white chocolate
Method:
1. Place the white chocolate in a bowl and microwave until melted, transfer the mixture into silicone mold (15 pieces total)
2. In a mixer bowl with a guitar hook place butter, sugar and brown sugar and mix on high speed for about 3 minutes, until the sugars are well absorbed in the butter and you get a smooth and slightly light mixture.
3. Stop the mixer and scrape the mixture from the sides of the bowl with a spatula.
4. Add the egg and vanilla extract and mix well until combined.
5. Add flour, cocoa powder, baking soda and salt and mix until combined.
6. Add dark chocolate chunks/ chips and mix again to combine.
7. Refrigerate the cookie dough for 30min.
8. Divide the cookie dough into 15 equal portions and roll into a ball.
9. Take 1 chocolate and push in the middle of the cookie dough and cover the with chocolate with the remain dough. Roll into a ball.
10. Place the cookies on a baking sheet lined with parchment paper.
11. Bake in a preheat oven at 340f (170c) for 10 min (the edges of the cookie should be firm and the middle is still soft)
12. Let the cookies cool for about 3-5 min and serve when they still warm
13. When the cookie completely cool the white chocolate gets hard. Just microwave for 5-8 sec and the white chocolate will melting again.

Cookie Butter Spread Cookies ????
Ingredients:
113g unsalted butter
60g cookie butter spread
1 egg
70g sugar
100g brown sugar
1 tsp vanilla extract
230g all purpose flour
1/2 tsp baking soda
3/4 tsp kosher salt
1/2 tsp ground cinnamon
Cookie butter spread (for the filling)
Method:
1. Microwave the cookie butter spread for 30 sec or until it’s get liquid.
2. Pour the mixture into a perline mold total of 19. Freeze
3. In a mixing bowl (microwave safe) place: butter, cookie butter spread and microwave until melt. Mix well to incorporate.
4. Add sugar and brown sugar and mix well.
5. Add egg and vanilla extract and mix again.
6. Add flour, cinnamon, salt and baking soda and mix until combined. Refrigerate for 20min.
7. Divide the dough into 19 equal portions (each piece should weigh 35g)
8. Flatten each bowl to a round shape and place the perline in the middle and cover with the remaining dough.
9. Place the cookies on a baking sheet lined with parchment paper and bake in preheat oven at 340f (140c) for 12 min.
10. Let it cool for 5 min and serve.
