How To make Rice Patties
2 tb Oil
2 lg Onions, diced
1 Stalk celery, diced
2 Carrots, diced
1 Green pepper, diced
2 Garlic cloves, diced
6 tb Tamari
1/2 ts Garlic powder
1/2 ts Basil
1/2 ts Oregano
3 c Cooked rice
1/4 c Peanut butter
1/2 c Flour
In a large skillet, heat the oil over medium heat; add the onions and saute for 5 minutes, until golden. Add the celery, carrots, andpepper; saute for 5 minutes,, add the diced garlic, and saute for 5 minutes more until the vegetables are tender. Season with the tamari, garlic powder, basil and oregano. Remove from heat. Add the rice. Season to taste. Add the peanut butter and flour. Preheat the oven to 350 degrees. Oil a cookie sheet. Form the mixture into patties, and place on the cookie sheet. Bake for 5 to 6 minutes until crispy golden on top; turn over and bake for 5 to 6 minutes more. Variation Substitute kasha (buckwheat groats), cous cous or bulghur for the rice. ▌Crispy Rice Cakes! :D
▌Total Cook Time: 30 minutes
▉ Ingredients
□ 1 cup short grain rice
□ 1/2 tbsp rice vinegar
□ 3/4 tsp white sugar
□ 1/4 tsp salt
□ potato starch
□ furikake seasoning
□ 2 ripe avocados
□ splash of lime juice
□ 1/2 cup crab meat
□ 1 tbsp kewpie mayo
□ 1 tbsp sriracha
□ 1/4 tsp sesame oil
□ 3/4 tsp honey
▉ Instructions
□ In a bowl, combine together the rice vinegar, sugar, and salt, and whisk to combine (you can place this in the microwave so the sugar and salt dissolve).
□ Pour this mixture over your cooked rice and gently fold until incorporated (try not to mix or you’ll break the rice grains).
□ Flatten this out on a rectangular/square-shaped dish, cover with plastic wrap, and place it in the freezer for about 15-25 mins until the rice is firm enough to cut.
□ Cut out the firm rice into rectangles or squares, and lightly dust with potato starch.
□ Shallow-fry this on medium-high heat for 2-3 mins on each side until golden brown (all we are doing is frying the outside so it’s crispy, while keeping the inside soft and moist! If you over cook the rice, it’s going to be too crunchy and hard to bite into)
□ Top with furikake as it cools.
□ Prepare your avocado mixture by mashing the avocados and adding about 1/4 - 1/2 tsp of lime juice.
□ Prepare your spicy crab by combining all ingredients together and adjust according to taste.
