Mosaic Jello Pie - No Bake Refrigerator Pie - Easter 2020 - The Hillbilly Kitchen
Happy Easter! Mosaic Jello Pie. Stained Glass Jello Pie.
This is a very easy no-bake, no-cook refrigerator dessert. If you can heat water in the microwave you can make this. The recipe came from my mother-in-law who made it for her family for the last 60 years. I have been making it for over 30 years and everybody loves it. We have it at most family gatherings, but especially at Easter and Christmas because of the colors.
I had to make several substitutions in this year in order to make the recipe. I replaced the whipped cream with whipped powdered milk and had to make some of my jello using unflavored gelatin, lemon extract, sugar and a few drops of food coloring.
You can use the sugar free Jello and Cool Whip in the recipe to make a low carb, low calorie dessert. You can also eliminate the crust to remove all the calories and carbs.
You can use fruit juice, unflavored gelatin and real cream to make an all-natural dessert.

½ cup Boiling Water
¼ cup Cold Water
1 -3oz Box Orange Jello
½ cup Boiling Water
½ cup Cold Water
1 -3oz Box Cherry Jello
½ cup Boiling Water
½ cup Cold Water
1 -3oz Box Lemon Jello
½ cup Boiling Water
½ cup Cold Water
1 – 8oz Tub of Cool Whip
Graham Cracker Crust:
3 Different No Bake Pie Crusts - The Hillbilly Kitchen -
Whipped Cream using Powdered Milk:
½ cup Powdered Milk
½ cup Ice Water
½ teaspoon Real Vanilla
2 tablespoons Sugar or Powdered Sugar
Jello Substitute:
I envelope Unflavored Gelatin
and
1/3 cup Sugar
½ to 1 teaspoon Extract
Food Coloring
Or
1/3 cup Sweetened Cool-Aid (Fruit Flavored Drink Mix)

1 cup Juice

Chocolate Pudding Pie
Makes one 9-inch pie (8 servings)
1 CHOCOLATE COOKIE CRUST
Filling:
2 1/2 CUPS WHOLE MILK
5 OUNCES (155 G) CHOPPED SEMISWEET CHOCOLATE (OR CHOCOLATE CHIPS)
4 LARGE EGG YOLKS
3/4 CUP (185 G) SUGAR
3 TABLESPOONS CORNSTARCH
1/4 TEASPOON SALT
1 1/2 TEASPOONS VANILLA EXTRACT
Topping:
1 CUP HEAVY CREAM
1 TABLESPOON SUGAR
1 TEASPOON VANILLA EXTRACT
GARNISH: CHOCOLATE CURLS
For the Filling: In a heavy saucepan over medium-high heat, warm the milk and chocolate. Whisk them occasionally until the chocolate is melted.
In a large bowl, combine the egg yolks and sugar, whisking them until pale yellow. Add cornstarch, salt and vanilla.
Slowly pour the warm chocolate mixture into the egg mixture, whisking them well.
Return the mixture to the saucepan, and cook over medium heat until it thickens and begins to bubble slowly, about 7 minutes. Remove the saucepan from the heat, and stir the mixture until it’s smooth, about 1 minute.
Pour the chocolate filling into the cookie crust, and smooth it with a spatula. Cover it with plastic wrap, pressing it directly onto the surface, and refrigerate it for 2 hours.
For the Chocolate Curls: Microwave a medium-size chunk of chocolate on low for about 5 seconds. Using a vegetable peeler, slowly and evenly scrape the edge of the chunk until curls form. (If it’s too cold, the peeler will make ragged shavings instead of curls, so repeat warming the chocolate as necessary.) Refrigerate the curls until ready to use.
For the Topping: Using an electric mixer fitted with a whisk (whip) attachment, beat the cream, sugar and vanilla on medium-high until stiff peaks form.
Spoon the whipped cream onto the pie, and use a spatula to spread it evenly, being careful not to disturb the chocolate pudding underneath.
Decorate with chocolate curls.
Refrigerate the pie until ready to serve, but let it sit at room temperature for 20 minutes before serving.

Ingredients
Crust
▢2½ cups chocolate baking crumbs (340g)
▢½ cup melted butter
Filling
▢1 ½ cups granulated sugar (300g)
▢4 large eggs (room temperature)
▢2 tablespoons cocoa
▢2 cups heavy cream (30-35% fat, divided)
▢200 grams chopped dark chocolate (I use 2 100 grams dark chocolate bars -- about 1 1/4 cup)
▢¼ cup unsalted butter
▢1 teaspoon vanilla extract
Instructions
To make the crust, stir together chocolate crumbs and butter. Press into a 9 pie plate and up the sides. Set aside.
In a large saucepan, whisk together sugar, eggs, cocoa and 1 cup cream until smooth.
Place saucepan over medium heat, stirring constantly, and cook until thickened (you will know when it's thick!).
Strain through a fine mesh sieve into a large bowl and stir in chocolate, butter and vanilla until smooth.
Set aside or refrigerate until cooled to room temperature -- 1-2 hours on the counter or 30-40 minutes in the refrigerator -- stirring occasionally.
Whip chocolate mixture on high speed until slightly lightened in color -- about 5 minutes.
Whip remaining 1 cup cream until stiff peaks form, and gently fold into chocolate mixture in two batches.
Spread into prepared pie crust and refrigerate 6 hours or overnight, until set. Garnish with additional sweetened whipped cream before serving if desired.
