Okay I am SO EXCITED for this one! This red velvet cake is so incredibly soft, full of flavour and is topped with the most delicious cream cheese buttercream. I couldn't think of a better match!
This is an updated version of my original red velvet cake recipe. I tweaked it slightly and came up with this version which I am IN LOVE WITH! I hope you all love it just as much :)
HOMEMADE CAKE RELEASE:
CREAM CHEESE BUTTERCREAM:
INGREDIENTS:
2¼ cups (275 g) flour - regular all purpose (see note 3 on blog post if you want to use cake flour)
3 tbsp (18 g) cornflour - also known as cornstarch
3 tbsp (14 g) cocoa powder - unsweetened
½ tsp baking soda
1 tsp baking powder
½ tsp salt - omit if using salted butter
6 tbsp (86 g) unsalted butter - room temperature
¾ cup (141 g) unflavoured vegetable oil - I use canola
1¾ cups (344 g) white granulated sugar
3 large eggs - room temperature
1 tbsp (12 g) vanilla essence/extract
1½ tsp white vinegar
3½ tbsp (38 g) red liquid food colouring
¾ cup (158 g) buttermilk - room temperature
Bake at 160 °C (320°F) with the fan on. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).

안녕하세요.

오늘은 아름다운 레드 벨벳 케이크를 만들어 보겠습니다.
좀 더 간단하고 쉬운 방법으로 아름다운 레드 벨벳 케이크를 만들어 봤어요.
기존의 너무 부서지는 질감에서 좀 더 탄력 있으면서 부드러운 케이크의 질감으로 만들었어요.
굉장히 부드럽고 푹신한 케이크라고 자부합니다.
재료도 비교적 간단하고요..
오늘은 홍국 쌀가루를 이용해서 만들었는데요.
색소를 기존의 레시피에서 현저히 작은 양을 사용하고도 아름다운 레드 칼라를 만들 수 있었어요.
홍국쌀가루란?
먼저 홍국쌀은 백미에 붉은 누룩곰팡이를 발효해서 만들어집니다.
대략 4~6주 정도의 시간이 걸리며 이 기간 동안 천연 붉은 색소가 생성되면서 백미가 빨간색 쌀이 됩니다.
홍국 공팡이가 만들어 내는 붉은 색 색소는 종류는 대략 50여종이나 되고 균주에 따라, 배양 조건과 시간에 따라 그 종류와 칼라가 달라집니다.
그래서 같은 회사의 제품을 구입했다 하더라도 그 제품에 따라 그 때 그때 색이 달라진답니다,.
이 홍국쌀은 과거 중국 황실에 진상되었던 귀한 한약 재료였어요.
발효 과정에서 나오는 모나콜린 K ( Monacolin-K )이 콜레스테롤을 낮추고 혈관 개선에 도움을 주며 성인병을 예방하고 소화를 잘 되게 하며, 복통과 설사에도 도움을 줍니다.
이런 홍국쌀을 건조한 후에 분쇄, 살균 과정을 거친 가루가 홍국쌀가루입니다.

코코아 가루 5g ( 1 tsp )
홍국쌀가루 15g (1 Tbsp + 1/2 Tbsp )
( 박력분 85g + 코코아 가루 10g + 레드 식용 색소 )-- 홍국쌀가루 미 사용시
우유 35g ( 2 Tbsp +1 tsp )
무염 버터 30g ( 2 Tbsp )
식용 색소 (레드 칼라)
♥ 크림치즈 프로스팅
크림 치즈 180g ( 3/4 컵 + 2 큰술 )
설탕 35g ( 3 큰술 )
레몬즙 10g ( 2 작은술 )
바닐라 익스트랙 3ml
생크림 235g ( 1 컵 )
● 커피 시럽
물 50g ( 3 큰술 + 1 작은술 )
설탕 30 g ( 2 큰술 + 1 tsp )
깔루아 또는 럼 5ml ( 1 tsp )
ㅡㅡㅡ 만드는 방법 ㅡㅡ
1. 물과 설탕을 계량하여
2. 전자레인지로 설탕을 녹여 주시고..
3. 깔루아 또는 럼을 넣어 섞어 주신 후 실온으로 식혀 주세요.
● 레드 미러 글레이즈
물 57g ( 4 Tbsp )
설탕 60g ( 4 Tbsp + 2 tsp )
물엿 90g ( 1/2컵 + 1 tsp )
가당 연유 50g ( 3 Tbsp + 1 tsp )
가루 젤라틴 7g ( 1 Tbsp )
+ 물 35g ( 2Tbsp + 1tsp )
밀크 초콜릿 25g ( 1 Tbsp +1 tsp )
화이트 초콜릿 70g ( 1/3컵 + 1 Tbsp )
식용 색소 (레드 칼라)

Red Velvet Cake
Recipe in English:
Ingredients:
-Maida (All-purpose flour) 2 & ½ Cups
-Cocoa powder 2 tbs
-Namak (Salt) ½ tsp
-Doodh (Milk) 1 Cup
-Sirka (Vinegar) 1 tbs
-Makhan (Butter) unsalted ½ Cup (room temperature)
-Cheeni (Sugar) powdered 1 & ½ Cups
-Anday (Eggs) 2
-Vanilla essence 1 tsp
-Red food color (gel) 1 & ½ tsp or Liquid color 3-4 tbs
-Baking soda 1 tsp
-Sirka (Vinegar) 1 tsp
Cream Cheese Frosting:
-Makhan (Butter) unsalted 200 gms (room temperature)
-Icing sugar 1 & ½ Cups
-Vanilla essence 1 tsp
-Cream cheese ¾ Cup
Directions:
-In bowl,place strainer,add all-purpose flour,cocoa powder,salt and sift together,mix well & set aside.
-In jug,add milk,vinegar,mix well and let it rest for few minutes.Butter milk is ready & set aside.
-In bowl,add butter and beat until fluffy.
-Gradually add sugar and beat until well combined.
-Add eggs,one by one and beat well after each edition.
-Add vanilla essence and beat again.
-In butter milk,add red food color and mix well.
-During mixing,add dry flour mixture gradually to the batter,alternating with the buttermilk then dry flour mixture then again butter milk and mixing just until incorporated and a smooth batter is formed.
-Grease 8” inch baking pan with cooking oil and place butter paper.
-In baking soda,add vinegar and mix well and add immediately in cake mixture and mix with the help of the spatula.
-Now pour cake batter into prepared pan.
-Bake in preheated oven at 180 C for 35-40 minutes or until the cake pulls away from the side of the pans and a toothpick inserted in the center of the cakes comes out clean.
-Remove the cake from the oven and run a knife around the edges to loosen them from the sides of the pan.
-Transfer the cake to the wire rack and let it cool.
Cream cheese Frosting:
-In bowl,add butter and beat until fluffy.
-Gradually add icing sugar and beat until well combined.
-Add vanilla essence and beat again.
-Add cream cheese and beat until smooth and refrigerate until use.
Assembling:
-With the help of the cake knife,horizontally cut two layers of cake.
-On cake tray,place cake layer and apply frosting.
-Place another cake layer and cover the sides of the cake with cream cheese frosting.
-Decorate & serve.

-Ek,ek ker ka anday dal dein aur ache tarhan beat ker lein.
-Vanilla essence dal ker dubara beat ker lein.
-Butter milk mein red food color dal ker ache tarhan mix karein.
-Mixing ka doran thora thora ker ka dry flour mixture aur butter milk alternatively daltay jayein aur smooth batter hunay tak beat kertay rahein.
-8” inch baking pan ko cooking oil sa grease karein aur butter paper laga lein.
-Baking soda mein sirka dal ker ache tarhan mix karein aur tayyar cake ka mixture mein foran dal ker spatula ki madad sa ache tarhan mix ker lein.
-Ab cake ka batter ko tayyar baking pan mein dal dein.
-Preheated oven mein 200 C per 35-40 minutes kliya bake ker lein.
-Cake ko oven mein sa bahir nikal lein aur knife ki madad sa edges ko lose ker lein.
-Cake ko wire rack per rakh ker thanda ker lein.
Cream cheese Frosting:
-Bowl mein makhan dal dein aur fluffy hunay tak beat ker lein.
-Thora thora ker ka icing sugar shamil kertay jayein aur beat ker lein.
-Vanilla essence dal ker dubara beat ker lein.
-Cream cheese dal dein aur smooth hunay tak beat karein aur istamal kernay tak refrigerate ker lein.
Assembling:
-Cake knife ki madad sa cake ko do horizontally layers mein cut ker lein.
-Cake tray per cake ki layer rakh dein aur frosting laga lein.
-Cake ki dosri layer rakh dein aur cakes ki sides ko frosting sa cover ker lein.
-Decorate ker ka serve karein.

- 125 gr White Chocolate
- 40 gr Milk Chocolate
- 60 gr Heavy Cream

Ingredients
✨1 cup castor sugar
✨1/2 cup oil
✨1 + 1/4 cup buttermilk
✨1/4 cup yogurt
✨1/2 tsp vanilla extract
✨5-6 drops of red food colour
✨1 + 1/2 cup all purpose flour
✨2 tbsp cocoa powder
✨1 tsp baking soda
Cream cheese frosting
✨1 cup cream cheese
✨1/2 cup butter
✨1/2 tsp vanilla extract
✨1.5 cup icing sugar
Method
1. In a bowl, add sugar, oil, buttermilk, yogurt, vanilla and red colour and whisk till everything is well combined.
2. Sift in the all purpose flour, cocoa powder and baking soda and mix well till you get a smooth batter.
3. Pour the batter into the silicon mould and cook it in the microwave for 7 minutes at normal cooking mode.
4. Once cooked, take it out of the microwave and let it cool down.
6. In a bowl add in softened butter and softened cream cheese. Using an electric whisk, whip the two together for 2 minutes.
7. Add in vanilla and whip again for a minute.
8. Sift in icing sugar and whip everything for another 2 minutes or until you see the frosting hold shape.
9. Finish the cake by spreading a generous layer of cream cheese frosting on top and garnishing with some cake crumbs.
