How To make Raspberry Struesel Muffins
1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 cup milk
1/2 cup butter
melted
1 large egg :
beaten
1 cup raspberries, frozen or fresh divided
Streusel topping 1/4 cup pecans :
chopped
1/4 cup brown sugar, packed
1/4 cup flour
2 Tablespoons butter -- melted
In a large bowl, combine flour, sugar and baking powder. Beat together milk, cooled melted butter and egg, and add to flour mixture, stirring just until moistened.
Spoon about 1 tablespoon of batter into each greased or paper-lined cup of 12-muffin tin. Divide half of the raspberries among the cups, top each with remaining batter, then add remaining raspberries.
For topping, combine pecans, brown sugar, flour and butter. Sprinkle over batter and bake in 350 oven for 20-25 minutes, or until toothpick inserted in middle comes out clean

Ingredients:
1 1/3 cup flour
1 ½ tsp. baking powder
1 cup fresh or frozen raspberries
¼ cup margarine
½ cup sugar
1 egg
½ cup liquid non-dairy creamer
¼ cup brown sugar
¼ cup flour
2 Tbsp. margarine
2 tsp. cinnamon
Cooking Directions:
Preheat oven to 375° F. Line 16 muffin cups.
Mix 1 1/3 cup flour and baking powder in a small bowl. Stir in raspberries. In a medium bowl, beat ¼ cup margarine with sugar and egg. Blend in creamer. Stir in flour mixture until just moistened. Spoon batter into muffin cups.
In a small bowl, mix brown sugar, ¼ cup flour, 2 Tbsp. margarine and cinnamon. Sprinkle over muffins. Bake 15-18 minutes.
Makes 16 servings.

Ingredients:
Streusel topping
- 1 cup granulated sugar
- 1⁄2 cup (1 stick) unsalted butter, softened
- 1 cup old-fashioned rolled oats
- 1⁄2 cup all-purpose flour
- 1⁄2 teaspoon ground cinnamon
Muffins
- 1⁄2 cup (1 stick) unsalted butter, softened
- 1⁄2 cup firmly packed brown sugar
- 1⁄2 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon kosher salt
- 1 cup full-fat sour cream
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup fresh raspberries
Instructions:
1. Preheat the oven to 375 degrees F. Line a muffin pan with 12 paper liners and set aside.
2. Streusel topping Place all the ingredients in a medium bowl and mix with your hands until combined. Set aside.
3. Muffins Cream the butter, brown sugar, and granulated sugar in the bowl of a stand mixer, or in a large bowl using an electric hand mixer.
4. Add the eggs one at a time, mixing after each addition. Add the vanilla, salt, and sour cream; combine just until thoroughly mixed, occasionally scraping the bottom and sides of the bowl with a rubber spatula. Add the flour and baking powder and mix until smooth. Fold in the raspberries.
5. Scoop the batter evenly into the paper liners, about three-fourths full. Sprinkle the topping evenly over the muffins. Bake for 30–32 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean. Let cool slightly before removing from the pan

Preppy Kitchen's Raspberry Streusel Muffins!
These are scrumptious & were not that long or hard to make! Definitely a recipe I will be keeping. I want to try it with different berries next time!
