How To make Raspberry Filled Jelly Doughnuts
6 tb Butter or margarine; melt
3/4 c Sugar
3/4 ts Cinnamon
1/3 c Raspberry jelly
10 oz Hungry jack fluffy biscuits
Heat oven to 375~. Place melted margarine in small bowl. In another small bowl, combine sugar and cinnamon; set aside. Stir jelly until smooth. Seal tip of large baster with foil. Remove rubber bulb. Spoon jelly into baster; replace bulb. Bake biscuits as directed on can. Immediately dip each hot biscuit in melted margarine, coating all sides. Roll in sugar mixture, heavily coating all sides of each biscuit. Insert baster in side of each biscuit; squeeze small amount of jelly into center. (Refill baster as needed.) Serve warm or cold. Enough amount for about 15 donuts (cut with a 7 cm | 2.75 inch diameter cookie cutter)
Donuts dough:
• All purpose flour: 440g (15.5oz)
• Clove: 1/2 tsp
• Cinnamon: 1/2 tsp
• Granulated sugar: 70g (2.5oz)
• Salt: 9g (0.3oz)
• Dry yeast: 7.5g (0.26oz)
• Warm Water: 180g (6.3oz)
* Prep: Warm up about a half of the water (about 40C | 104C) and add to the yeast, mix and wait for about 10 minutes. Add the rest of water and mix.
• Egg: 100g (3.5oz or about 2 eggs)
• Unsalted butter (Soften): 60g (2.1oz)
Deep-fry with 170C (Hold the temperature) for about 3 minutes
Raspberry filling
• Fresh raspberries: 300g (10.6oz)
• Granulated sugar: 200g (7oz)
• Pectin powder: 2 tsp
• Lemon juice: 2 tsp
