How To make Raisin Nut Cake
1 c Raisins
1/2 c Bourbon
1 c Butter or margarine;
-softened 2 1/4 c Sugar
5 Eggs
3 1/4 c All-purpose flour
1 ts Baking powder
1/2 ts Baking soda
1 1/2 ts Ground nutmeg
1 c Buttermilk
2 c Coarsely chopped pecans
Brown sugar glaze; see -recipefor Recipe by: Southern Living
Combine raisins and bourbon, stirring well. Cover and refrigerate at least 1 hour. Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, soda, and nutmeg; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Mix after each addition. Fold in pecans and reserved raisin mixture. Pour batter into a greased and floured 10-inch tube pan. Bake at 325 degrees for 1 hour and 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan, and place on serving plate. Drizzle Brown Sugar cake. -----

This is a very easy nut cake recipe, you can add the nuts of your choice, plus you can add the candied fruit instead of raisins because of the thick batter. I’m putting the recipe below….

Recipe
First add 1 cup and 1/4 of self rising flour to your bowl, then add 1 cup of granulated. Mix well, then add 1 pack of spice bread or cake mix to the bowl, then add 3 teaspoons of pumpkin spice to the bowl, mix well.
Next place 4 room temperature eggs to a bowl, add 1 tsp of almond extract and 2 tsps of vanilla and add to the bowl. Then add 1/2 stick of melted butter and 1/2 cup of vegetable oil to the mixture , then add 1 cup of orange juice.
Mix all ingredients well.
Then add 2 cups of chopped nuts and 2 cups of raisins to a bowl and add 3 tablespoons of flour, coat them well.
Add these to the mixture. Fold into the batter.
Preheat oven to 325 degrees and bake.
Add icing, or powdered sugar or leave plain.
Enjoy!

Feeding your fruit cake in the weeks leading up to Christmas helps to build and intensify the flavour of the cake, and will ensure it's beautifully moist.
Oven Temp:
Bake in the oven at 150C/300F (fan) for 45 minutes, then 140C/275F (fan) for a further 60-75 minutes - until an inserted skewer comes out clean.
Alcohol-free Christmas Cake:
For a non-alcoholic version, you can replace the alcohol with cold tea, fresh orange or apple juice.
You can then feed the cake with either:
1. Cold tea
2. Fresh orange or apple juice
3. Ginger cordial mixed with water (2 tsp mixed with 2 tbsp water)
4. Rum flavouring mixed with water (⅛ tsp mixed with 2 tbsp water).
If you do this, don’t make the cake any earlier than November, as juice (as opposed to alcohol) could start tasting funny after more than a couple of months.

The easy fruit cake ingredients:
3/4 cup (175g) unsalted butter, chopped
1 packed cup (210g) light brown muscavado sugar
2 + 2/3 cups (400g) mixed dried fruit
1 cup (200g) glacé cherries roughly chopped
1 cup (100g) dried cranberries
Zest and juice of 1 orange
Zest of 1 lemon
1/2 cup (120ml) cherry brandy
1/2 cup (85g) ground almonds (coarsely ground - not the type that is like flour)
3 large eggs lightly whisked
1 + 2/3 cup (200g) plain/all-purpose flour
½ tsp baking powder
1 tsp ground mixed spice
1 tsp ground cinnamon
¼ tsp ground allspice
To feed the Christmas cake:
Cherry brandy (1-2 tbsp per week)

Walnut-Raisin Cake Mazurka.
You will need:
6 eggs
1 cup of sugar
1 cup of flour
2 packets of Vanilla sugar or 2 teaspoons of Vanilla extract
300g of raisins(2 cups) I used mixed colors
400g of walnuts(3 cups)
Method:
In a stand up mixer crack 6 eggs , add vanilla sugar and mix on medium-high speed until eggs combined.
Gradually add sugar.
On high speed mix for about 5 min until egg mixture is pale yellow and all sugar has dissolved.
Sift flour into egg-sugar mixture and carefully using spatula mix in.
Add raisins and walnuts, mix to combine.
Preheat oven to 375 degrees Featherweight.
Line Jelly Roll pan with parchment paper.
Tip: Butter you pan first before you line it with paper. It will stick better.
Pour your batter into a pan, spread evenly.
Put your Mazurka cake in preheated oven and set cooking time for 40-45 min. Your cake is ready when inserted tooth peak comes out clean.
Take out of the pan, let cool for 30 min.
Cut into diamond shape pieces.
Sprinkle with icing sugar(optional) and enjoy!
Tip: This cake, since it has biscuit type texture could be cut into thinner slices, second baked it and used as biscotti cookie to enjoy with coffee.
Could be stored in an air tight container.

Egg - 2
Sugar - ½ cup (100 g)
Butter(melted) - ⅓ cup (80 ml)
Yogurt - ½ cup (120 g)
Vanilla extract - 1 tsp
All purpose flour - 1 ¼ cup (160 g)
Baking powder - 1 ½ tsp (6 g)
Salt - ¼ tsp
Pan size : 20 x 10 x 7centimetres
Bake in preheated oven (180°C) for 35 - 40 mins
