How To make Quick Turkey & Sausage Paella
Ingredients

turkey, cutlets, cut 1/2 inch strips

pound
chorizo, or other sausage, cut in slices

onion, thinly sliced

each
bell pepper, red
1 1/4
tablespoon
olive oil

each
chilies, red, hot, dried
1/4
teaspoon
thyme, dried
1
each
bay leaf
1 1/2
cup
rice, long grain
1/2
cup
wine, dry, white
1 3/4
cup
chicken stock
8
oz
tomatoes, italian, can
1/4
teaspoon
saffron
1
salt, and pepper, ground
3/4
cup
peas, frozen, thawed
Directions:
Heat oil in a 3 quart dutch oven; add turkey and saute until lightly browned, about 4 minutes. Add sausage and saute it until lightly browned. Add the onions, chiles, thyme, and bay leaf; cook over low heat until onions soften, about 5 minutes. Add the bell pepper and rice, stirring to coat with oil. Add the wine, chicken stock, tomatoes, saffron, 1/4 tsp salt and 1/4 tsp pepper. Bring to boiling; reduce heat and simmer, covered until rice is tender, 18 to 20 minutes. Remove from heat; stir in peas; cover and let stand for 2 minutes; adjust seasonings and serve immediately.

4 large Italian sausages, chopped into bit size chunks
1 tablespoon Olive oil for cooking
1 medium green bell pepper, sliced
1 medium red bell pepper, sliced
1 medium onion, sliced
4 cloves chopped garlic
2 teaspoons Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
1⁄2 teaspoon chili flakes
1 tablespoon tomato paste
1 medium can of diced tomatoes (I use olive and garlic, but use the tomatoes of your choice.)

PAELLA ALLA TURCA
In this episode, I would like to share with you my Turkish version of famous Spanish dish 'Paella'. It is so easy to prepare but once you serve it, you will amaze your guests and the family. It looks and tastes so good!

INGREDIENTS:
1/2 kg. (1 lb) chicken thighs at room temperature (coarsely chopped and lightly floured)
3 green peppers, 3 red peppers (coarsely chopped)
3 tomatoes (coarsely chopped)
1 large onion (finely chopped)
1 cup sausage (cut in small cubes) I used Turkish sausage, called 'sucuk'
3 cups of bulgur (cracked wheat) you may use 3 cups of rice instead
2 hard-boiled eggs (to decorate)
2 lemons (to decorate)
1 cup chopped fresh Italian parsley (to decorate)
Olive oil 1 cup
4 garlic cloves
3 tsp tomato paste
Salt and black pepper
Red chili pepper (if desired)
Large, round baking tray
DIRECTIONS:
Preheat your oven to 200°C (400°F)
Pour 1/2 cup olive oil to the tray and grease it.
Pour the chopped chicken, green and red pepper, 3 garlic cloves and tomatoes.
Sprinkle 2 tsp of salt, and 1/4 tsp of black pepper. You can also add a good pinch of red chili paper if desired.
Now it is time to get dirty, blend all with hands :)
Wash your hands :) and bake it for 20 minutes.
In the meantime, boil your eggs.
Heat up 1/2 cup of olive oil with 1 garlic glove in a saucepan at mid-low heat.
When the oil is hot, remove the garlic, add the onions and saute for 5 minutes.
Add the sausage (sucuk), cook for 2 minutes.
Add 3 tsp of tomato paste and mix well.
Pour 3 cups of bulgur, sprinkle 1 tsp salt, a pinch of black pepper and cook another 2 minutes while stiring.
Then turn off the heat!
If you wanna cook 2 cups of bulgur instead of 3, add a little less olive oil+salt and
pour 4 cups of hot water in the next step. Also bake for about 14-15 minutes.
Take the tray from the oven and add the bulgur mixture into it.
Add 6 cups of hot water, stir gently.
Carefully put it back into the oven and bake for another 20 minutes.
In the meantime, peel the boiled eggs, cut the eggs and lemons into 8 long slices and season.
Finish baking, taste it for seasoning, add more if desired and if so mix gently.
Decorate your Paella with the egg and lemon slices .
Last but not least, sprinkle the parsley all over the top as a garnish and serve hot.
