Directions:
Saute onion, green pepper, garlic and celery in oil in large stock pot over medium heat for 10 minutes or until soft. Add tomato juice and season to taste. Add pasta and simmer over low heat 20 minutes or until pasta is tender.

Happy New Year! Got nothing in your fridge or sick of eating food over the holidays? I love to whip up my TOMATO EGG DROP NOODLE SOUP whenever feeling lazy (or hungover!). It comes together in under 30 min and with just a few random condiments in your pantry and fridge. It's super easy to make and delicious!
Ingredients you'll need:
- 500g fresh egg noodles
- 1 1/2 tbsp vegetable oil
- 5 cloves garlic
- 1 thai chili
- 1/2 tsp gochugaru (Korean dried red chili flakes)
- 3 eggs
- 5 hot house tomatoes
- 2 tbsp miso paste
- 2 tbsp gochujang
- 1 tsp soy sauce
- 1 tsp dashi powder
- 1 tsp shaoxing wine
- 6 cups water
- chives (to garnish)

As the first kid in my family, I used to take care of my two little sisters. Tomato egg noodle soup is the most often breakfast that I cook for us in the morning before going to school because it is quick and easy. Despite the simple ingredients, The combination is delicious - so flavorful and comfortable. Unlike other Chinese dishes, this doesn’t require any special ingredients. You probably have everything in your kitchen already.

INGREDIENTS (Serves 3 people)
3 eggs
3 tomatoes
3 tbsp of vegetable oil (Amazon Link -
2 tbsp of tomato paste (Amazon Link -
1 tbsp of minced garlic
1 tsp of sugar
1/2 tsp of salt
4 cups of low-sodium chicken stock (Amazon Link -
3 servings of noodles (300g of fresh noodles or 200g of dried noodles)
soy sauce or salt to adjust the taste at the end
A handful of baby bok choy
Salt to taste
INSTRUCTIONS
Crack 3 eggs into a bowl and beat them well. Dice 3 tomatoes.
Turn the heat to high and heat the wok until smoking hot. Add some 2 tbsp of oil and fry the egg until set. Turn off the heat. Break the egg into chunks by using your spatula. Remove the egg from the wok and set it aside.
Drizzle 1 more tbsp of oil into the wok. Add the diced tomato, minced garlic, and tomato paste. Stir to dissolve the tomato paste.
Season it with 1 tsp of sugar and 1/2 tsp of salt. Keep stirring over low heat for a few minutes or until the tomato juice appears.
Pour in 4 cups of chicken stock and bring to a boil. Add three servings of noodles and cook until done.
Add baby bok choy and the egg into the wok. Taste the broth to adjust the flavor. I only need to add 1 tbsp of soy sauce here as I used low-sodium stock. If you use unsalted chicken stock, you will need to add more soy sauce or salt by taste.

Tomato Egg Noodle Soup
This is a easy, simple and delicious noodle soup loaded with nutrients from tomato.
Ingredients (1 pax serving):
1)3 medium large tomato cut into slice
2)Scallion, garlic, red onion chopped
3)Noodle
4)Egg - 2 pcs
5)Oil
6)Salt - 0.5 teaspoon
7)Sugar - 1 teaspoon
8)Light soy sauce - 2 teaspoons
9)Ketchup 4-5 teaspoons
10)Dash of white pepper powder
Method:
1)Heat up oil and add 1 beaten egg to pan fry scramble egg, set aside
2)Heat up oil, saute scallion and red onion
3)Add tomato then stir fry
4)Add garlic and continue to stir fry until the tomato melt
5)add 1 bowl of hot water
6)Add salt, sugar, light soy sauce, ketchup and pepper powder
7)add the fried egg
8)close the lid, cook at low heat for 2 mins
9)cook noodle; add some salt to the water to enhance noodle flavor
10)transfer the cooked noodle into a bowl
11)beat 1 egg, 'egg drop' into the soup, turn off the heat immediately
12)mix soup and noodle, add scallion, or (chilli or sesame oil optional)

番茄鸡蛋面
这是一道简单、美味的面条汤,富含番茄营养。
材料 1人份
1)3个中大番茄切成片
2)葱、蒜、红葱全部剁碎
3)面条
4)鸡蛋 - 2个
5)油
6)盐 - 0.5 茶匙
7)糖 - 1茶匙
8)生抽 - 2 茶匙
9)番茄酱 4-5茶匙
10)少许白胡椒粉
煮法:
1)油热, 加入1个打散的鸡蛋,煎炒蛋, 备用
2)热油,爆香葱花和红葱
3)加入番茄然后翻炒
4)加入蒜末继续翻炒直到番茄融化
5)加入1碗热水
6)加入盐、糖、生抽、番茄酱和胡椒粉
7)加入已经煎好的鸡蛋
8)盖上盖子,小火煮2分钟
9)煮面; 水里加点盐可以增加面条的味道
10)将煮熟的面条倒入碗中
11)打1个鸡蛋,倒入汤中 (滑蛋),马上关火
12)将汤与面条混合,加入葱(辣椒或芝麻油可选)
