Easy Chocolate Macaron - Swiss Method
I made double recipe of chocolate macarons but I'm only showing 1 tray to cut it short and straight to the point. I'm aware that many macaron makers are having trouble with this flavor but the secret is to have a very strong meringue as your base. I tried baking this at 325F for 14 minutes and 300F for 18 minutes and they both worked out great. So play around with your oven and see what temperature works best for you.
You will see the step by step tutorial on the video.
Macaron Recipe
130g - egg whites
125g - granulated sugar
145g - almond flour
135g - powdered sugar
20g - Dutch Cocoa powder
Dark Chocolate Ganache
120g - dark chocolate ( I used Guirardelli)
1/2C - heavy cream
Heat up heavy cream until it starts to boil then pour it over chocolate. Wait at least 2 minutes before mixing, mix until homogenous. Set and Let it cool in the fridge for about 45 minutes to an hour.
