(1 c.) crab & lobster combination 2 tablespoons Madeira 1/4 cup grated Swiss cheese 3 large eggs 1 cup heavy cream 1/4 teaspoon salt 1 pinch pepper 2 tablespoons white wine Cook onions in butter 1 to 2 minutes. Add fish and stir 2 minutes. Add pepper a nd white wine. Raise heat and boil 1 minute. Allow to cool slightly. Beat eggs, cream and seasonings. Gradually add fish mixture.
