GRANDMA'S HOMEMADE KOLACHES INGREDIENTS:
For the Dough: 1 cup warm whole milk 1/2 cup sugar 5 tbsp melted butter, cooled 3 large eggs, room temperature 2¼ tsp active dry yeast, or instant yeast 5 cups all-purpose flour 1 tsp salt
For the Cream Cheese Filling: 8 oz cream cheese, room temperature 1/4 sugar 1 egg yolk 1/4 tsp vanilla extract
For the Poppy Seed Filling: 1/3 cup poppy seeds 1/4 cup sugar 1 tbsp all-purpose flour 1/4 cup whole milk 1 tbsp unsalted butter 1/2 tsp vanilla extract

České koláče - Czech kolaches with poppy seeds!
In this video I will show you how to make Czech classic pastries called koláče - kolaches! We will make the yeast dough and will create our kolaches with a bottom of a water glass. And for filling we will use poppy seeds paste (see my other video how to make it) topped with almonds.

For the dough: 1 cube of fresh cake yeast 60 g (1/3 cup) white granulated sugar 250 ml (1 cup) milk 200 ml (0.85 cup) vegetable oil 1 cup sour cream 4 egg-yolks 500 g (4 cups) all-purpose flour pinch of salt
For the crumble: 50 g (3 1/2 tbsp) softened butter 120 g (0.6 cup) white granulated sugar 100 g (1/2 cup + 2 tbsp)
Mash the yeast and sugar in a bowl using the back of a spoon until the yeast starts to dissolve. Add lukewarm milk and leave it covered and wait till yeast rise (10 - 15 minutes).When the yeast is activated, add all ingredients and mix it well. Keep kneading the dough until it gets smooth. Place it in a large bowl on a warm place, cover it with a dish cloth and let it to rise for about 1 hour. Knead it twice while rising. When the dough is risen, place it on a baking mat and cut it into 2 pieces. Roll out the dough with a rolling pin. You can make rounded kolaches shapes by pressing water glass into the dough or by shaping iit in your hand. Add filling according to your choice - marmelade, walnut paste, poppy seeds paste etc.Brush it with beaten eggs. Bake it on a well-greased baking sheet for about 10-15 minutes at 180 C (356 F).
Kolach Part 2 - Making the Nut Filling
Polish Kolaczki (Filled Cookies)
A soft rich dough filled with fruit preserves, nuts or poppyseeds. Kołaczki are a traditional favorite in Poland and Central Europe.
In this video, I walk you through making the dough, prepare a nut filling, and talk about other fillings you might use.
We’ll roll out the Kołaczki dough and talk about several options for cutting it into 2-inch squares. I’ll share tips to ensure your cookies stay folded over while baking.
You’ll want to include these for Christmas and your baking for other special occasions. I bake them ahead of time and freeze until the day I need them. Dust them with powdered sugar just before serving.
Cream the butter and cream cheese. Incorporate the flour and salt. Chill the dough for at least an hour or over night. Roll the dough to 1/4-inch thick and cut into 2-inch squares. Put 1/2-1 teaspoon of your favorite filling to the center. Lift up two opposing corners, pinch them together with a dab of water. Fold the point to one side. Bake at 350 F (180 C). Cool, dust with powdered sugar.
Nut filling Ingredients 8 ounces walnuts (225g) 1 cup sugar (200 g) 1 egg white 1/2 teaspoon vanilla extract 1/2 teaspoon almond extract Add a few drops of water (if needed)
Finely chop the walnuts with a knife or steel blade in a food processor. Add the sugar, egg white, and extracts. If you mixture is too dry (not coming together) add a few drops of water. Use for Kołaczki or other recipes.
