How To make Poppy Seed Cookies2
4 c Flour (or more)
1 t Baking powder
1/2 c Poppy seeds
3 Eggs
1 c Oil
1 c Sugar
Juice of 1 orange 1 t Grated orange rind
Cream sugar and eggs. Add oil and juice and then poppy seeds. Mix thoroughly. Add dry ingredients gradually, mixing well. Roll out a small amount at a time on a well floured board, to 1/8th inch thickness. Cut with cookie cutter or glass into desired shapes. Place on greased cookie sheet and bake in a 350 F. oven for 10 to 15 min or until nicely browned.

The WORST Cookies EVER
I do not like the pink frosted sugar cookies from the store. The texture is like sand. The frosting is always dry and far too sweet. The entire cookie tastes like a chemical. I do love the concept of this cookie though, so I decided to recreate them at home! They were so much fun to bake and decorate. I'm prepared for a war in the comments.

Healthy OATMEAL COOKIES (with Matcha filling)
Soft and chewy healthy oatmeal cookies are sandwiched together with delicious matcha cream cheese frosting to create the perfect dessert.

Ingredients:
For cookies:
3/4 cup (70 g) rolled oats
3/4 cup (90 g) all-purpose flour OR oat flour
1/4 cup (55 g) brown sugar OR coconut sugar, any granulated sweetener
2 tbsp (17 g) ground flaxseed
1/4 cup (55 g) coconut oil, melted OR butter
3 tbsp (45 g) oat milk OR any type of milk
1 tsp vanilla
1/4 tsp baking powder
Pinch of salt
For filling:
2 oz (60 g) cream cheese OR cashew butter
2 tsp Matcha powder OR instant coffee
2-3 tsp agave syrup OR maple syrup, honey etc.
Instruction:
1. Preheat oven to 350 F (175 C). Line a baking tray with parchment paper and set aside.
2. In a mixing bowl stir together the oats, sugar, flour, flax, baking powder and salt until combined.
3. Add in the milk, coconut oil and vanilla and mix until a sticky dough forms.
4. Divide the dough into 12 evenly sized balls. It helps if you wet your hands a bit before. Use your fingertips to press them flat.
5. Bake for 13-15 minutes or until edges start to brown.
6. Once cooled, place all filling ingredients into a bowl and whisk until smooth.
7. Find the right half for each cookie. Lay each cookie on it's back so the bottom is facing up. Spoon filling into the center of the bottom of each cookie. Sandwich cookies together. Place the cookies in the fridge for 30 minutes or freezer for 10 minutes. Serve cold.
8. Store cookies in the fridge/freezer.
