How To make Polish Yeast Cake
1/2 c Milk
1/2 c Sugar, granulated
1/2 ts Salt
1/4 c Butter
1/4 c ;Water, warm
1 pk Yeast, dry
2 Egg; beaten
2 1/2 c Flour, white
1/2 c Almonds; chopped
1/2 c Raisins
1/4 ts Lemon peel, grated
1 c Sugar, confectioners
1 tb Milk
Whole candied cherries Scald the half cup of milk. Stir in the sugar, salt, and butter. Cool to luke warm. Pour warm water into a large bowl. Sprinkle the yeast over the water and stir until dissolved. Add the milk mixture, the eggs and flour. Beat vigorously for five minutes. Cover and let rise in a warm place, free of drafts, for 1 1/2 hours or until doubled in bulk.
Stir down the risen batter and beat in the almonds, raisins, and lemon peel. Pour the batter into a greased and floured 1 1/2-quart charlotte mold or deep cake pan. Let rise for 1 hour. Bake in a 350 F. oven for 50 minutes. Let cool in the pan for20 minutes, then remove. Beat together the confectioners' sugar and 1 tablespoon of milk to form a glaze. Crumble cake based on a recipe from my Polish grandma. A super delicious and fluffy yeast cake with raisins that still tastes fresh the next day. Perfect for coffee and cake, as a dessert or for breakfast, smeared with a little butter.
You will be amazed by the result!
Recipe:
Approach:
- 80g wheat flour
- 1 teaspoon of sugar
- 125ml warm milk
- 60g fresh yeast
- mix well
- Let rest at 30 ° C for 20 minutes
- In the meantime, soak 100g raisins in 250ml warm milk
- The approach should have increased significantly
Dough:
- Melt 150g butter
- 720g wheat flour
- 180g sugar, you can also use brown sugar
- Add 8 egg yolks
- Add the melted but cooled butter
- Add the milk with the raisins
- Add the approach
- Mix everything well
- Knead by hand for 5 minutes
- Cover and let rise for one hour at a maximum of 35 ° C
Streusel:
- 150g flour
- 100g sugar
- 100g butter
- Optional: lime zest
- Knead well until the dough forms a solid mass

Baking pan:

- Grease the baking pan, I used a 25 / 38cm baking pan

Ingredients:
For the Pie Crust:
2 cups white all-purpose flour
1/4 cup granulated sugar
1/2 cup unsalted butter (cold)
2 large eggs
4 tbs heavy cream
1 tsp baking powder
1/4 tsp salt
For the Cheese Filling:
500 gm ricotta cheese or home made pot cheese
100 g sugar
100g butter
2 eggs
25 g flour
125 g raisins
1 tsp of vanilla extract
Instructions:
In a mixing bowl mix together your flour, baking powder and salt.
Add cold butter and blend it together with a pastry cutter or in a food processor
Add sugar, eggs, cream and vanilla extract and work the dough until all ingredients are well blended together and form a ball.
Cut the ball of dough in half, cover with plastic wrap and refrigerate
Line your 8 by 8 baking pan with parchment paper
After the dough has chilled sufficiently, remove one portion of the dough from the fridge and place it on a lightly floured surface. Roll the pastry into rectangle more or less the size of your baking pan
Fold the dough in half and gently transfer to the baking pan and pressing with your fingers if you need to fill the bottom of the pan
Prick the dough with a fork all over the surface and bake the crust for about 15 min in 180 degrees Celsius until golden brown. Let it cool a bit
Add the cheese into the food processor and process for around 60 seconds.
Transfer the butter (room temperature) in to the bowl of your stand mixer and beat it until light and fluffy. Add the cheese and mix it together. Add sugar and mix it for another 30 seconds.
Add eggs one at the time, mixing well after each addition and then add vanilla extract and mix 30 seconds more.
Add raisins and flour and fold them in with a spatula.
Transfer your cheese mixture on top of your baked and cooled crust.
Remove the second part of pastry from the fridge and roll it into a thin rectangle.
Using a pastry wheel or pizza cutter, cut the pastry into about 1 cm strips. Place the strips of pastry on the cheese layer creating a crisscross pattern.
Bake for about an hour at 150 degrees Celsius (300 F) until top is golden brown. You may have to cover the cake with a aluminium foil after around 30 minutes to prevent browning too much.

FULL MODIFIED RECIPE
Ingredients
5 envelopes of dry yeast
1 cup of sugar
almond , or vanilla extract to taste
3/4 cup of canola oil
1/4 cup of apple cider vine
3/4 cup of almond milk
2 cups of all purpose flour
2 cups of all purpose flour for later
Fruit of your choice(1-2 cups)
Ingredients to make crumble
1/2 cup of vegan butter
1/2 cup of sugar
1 cup of all purpose flour
Directions
To make a cake we will create layers of ingredients WITHOUT MIXING THEM and keep them in a fridge overnight in the following order( yeast, sugar, extract, oil, apple cider vinegar, milk and flour).
Take your mixture out of the fridge and mix it well. Pour your mixture into a baking pan greased with oil. Top it with fruit, Combine butter, sugar, and flour to create crumble and work with your hands until loose( add butter if too dry, and add flour if too moist). Sprinkle your crumble over the fruit until all covered.
