Creamy Pineapple Pie | No Bake Dessert | Easy Dessert Ideas
Hey friends, it's so hot here... no bake desserts are the ONLY way to go! This cool, creamy pineapple pie is one of our favorite, simple summertime treats at the moment. Of course, I had to share this no-bake, easy dessert with you all! I hope you love it as much as we do!
**Tip: If the pie has a hard time setting up because of the heat or humidity in your area, place it in the freezer for 20 minutes just before serving.

I've got another yummy dessert for y'all to try! This thing is good to eat any time of year, but I think it would also make a fabulous summer time dessert with all this pineapple! Make sure you try this one!!

Pineapple Dream Dessert:
1 can crushed pineapple
1 container cool whip, 8 oz
1 block cream cheese, softened
1 stick butter, melted
2 sleeves graham crackers, crushed into crumbs
2 cups powdered sugar, sifted
Start by crushing up those graham crackers. You can use a ziploc bag or a food processor to crush them up, or get some pre made crust if you want. Add the melted butter and mix really good. Set aside about 1/2 cup of the crumb mixture. Press the crust into a 9x13 pan (or 2 smaller pans like I did). Put it in the fridge until you're ready for it. In a bowl, add your softened cream cheese and go ahead and blend it with your stand or hand mixture till it's kinda smooth. Then add your sifted powdered sugar in a little at a time until it's well combined. Sit it to the side. In another bowl, add your cool whip. Drain the crushed pineapple. Add half to each bowl and mix well. Take your crust out of the fridge and layer the cream cheese mixture and then the cool whip mixture. Be careful when spreading each layer. Sprinkle the reserved crumbs over the top. Put in the fridge for at least 4 hours. I put mine in there overnight.

OLD SCHOOL PINEAPPLE ???? CREAM PIE ????(FRIDAY NIGHT PIE ???? OF THE WEEK SEGMENT)
This is another easy creamy delicious pie with lots of pineapple flavor
If you enjoy pineapple ,you will definitely love this pie
RECIPE FOR FILLING:
PINEAPPLE CREAM PIE
1 DEEP DISH PIE CRUST (PRE-BAKED)
3/4 CUP PINEAPPLE JUICE(FROM THE DRAINED PINEAPPLES)
11/2 CUP EVAPORATED MILK
1 1/2 CUP SUGAR
6 TBSP. CORN STARCH
4 EGG YELLOWS (SAVE THE WHITES)
2 TBSP SALTED BUTTER
1 TSP. VANILLA
15.5 OZ. CRUSHED PINEAPPLE DRAINED VERY WELL
FOR MERINGUE:
1/4 CUP SUGAR
1/2 TSP. CREAM OF TARTAR
2 TSP. CORN STARCH
Prick pie crust with a fork and bake in 350-degree oven until golden brown.
In a heavy bottom pot or double boiler combine sugar, and corn starch. Whisk well. Add milk, pineapple juice and let come to a boil and thicken
add small amount of hot mix to egg yolks in separate bowl
mix well and add to hot pudding mixture,stir well and whisk in vanilla and butter and THEN ADD PINEAPPLE. Place in a pre-baked pie crust. Top with meringue and bake in 350-degree oven for 25-20 minutes until golden brown.
RECIPE FOR MERINGUE
Place 4 egg whites in stand mixer with wire whisk on highest setting. In a small bowl combine 1/2 tsp. Cream of Tartar, 2 tsp. Corn Starch, 1/2 cup granulated sugar. Once eggs are foamy, slowly add sugar mixture 1 tbsp. at a time. Beat until stiff peaks form. (when beater is removed the meringue will stand straight up in a peak). Be careful not to over beat. Place the meringue on HOT filling to help the egg whites start cooking.
