How To make Pineapple Seven Up Cake
1 pkg. Yellow cake mix
1 pkg. Instant pudding mix
(Pineapple)
3/4 cup Cooking oil :
(Crisco)
4 Eggs
1 bottle Seven-Up -- (10-oz.)
Frosting: 1 1/2 cups Sugar
2 Tablespoons Flour
1/2 cup Margarine (1 stick)
2 Egg yolks :
, slightly beaten
1 med. can Crushed pineapple , do not drain
1 cup Coconut :
(+more if needed)
1 cup Chopped pecans -- (+more if needed)
Mix together cake mix and instant pudding. Add oil. Add eggs, beating well after each addition. Add Seven-Up. Mix well. Bake in 9x13-inch greased and floured pan at 350 deg. F for approximately 30 minutes, or until cake pulls away from edge of pan.
Frosting:
Mix together sugar and flour. Add the rest of the frosting ingredients except the coconut and chopped pecans. Cook on top of stove, or in microwave oven, until thick; then add the coconut and chopped pecans. Spread on cake.

ingredients..
2 cups ( 4 sticks of unsalted butter) softened
3 cups of sugar
8 large eggs ( room temperature)
1 tablespoon of vanilla extract
1 cup of heavy cream
3 cups of all purpose flour (sifted )
1 teaspoon baking soda
1/2 teaspoon of salt
preheat the oven to 300 degrees.. cream the butter and sugar together in a large mixing bowl ..with an electric mixer ..beat the eggs in 1 at a time.. combine the vanilla and cream...mix the flour and baking soda and salt together..add the vanilla and cream mixture..then the flour mixture of flour baking soda and salt.. alternating between the flour and milk..
pour the batter into a 10 inch nonstick tube pan..bake at 300 for 90 minutes or until the toothpick comes out dry ..

7up cake with pineapple coconut topping????
This cake can be eaten with or without the topping and it is so soft and delicious.
Ingredients:
7 up, 3.5 oz of vanilla instant pudding, 6 eggs, 3/4 cup vegetable oil, 1 1/2 cup sugar 1/2 a cup of butter( 1 stick), 1 20 oz. can of crushed pineapple, 1 cup of shredded flaky sweetened coconut, 2 tablespoons of flour.
Directions:
in a bowl mix the yellow cake and instant pudding then add four beaten eggs and stir.. then add 3/4 cup of vegetable oil stir it up. and then add 1 and 1/4 cup 7 up and stir until it looks mixed and fluffy.
Bake at 350 degree's for about 30-35 min. Keep your eye on it.I stick it for work in it to make sure it's done. support comes out clean you're good.
topping:
melt a half a cup of butter in a pan and then add one can of crushed pineapple. and two beaten eggs. let that cook and put it in a separate bowl and add two tablespoons of flour and one and a half cup sugar and stir. and then add your cup of coconut when it cool down a little bit.
If you don't want it as sweet you can also used unsweetened coconut. My kids don't like the topping so I always put it in a bowl to the side. That also helps the cake not get soggy.

7-Up Cake with Pineapple Topping:
1 box pineapple or yellow cake mix (I prefer pineapple)
3 large eggs
3/4 c vegetable or canola oil
1 box instant vanilla pudding mix (small)
1 bottle(7 oz size) 7-up
Note: since I'm unable to find this size, I just measure out 7 ounces, which is 1cup minus 2 tablespoons.
TOPPING:
1 can(s) crushed pineapple (20 oz) undrained
2 Tbsp flour
2 large eggs
1 1/2 c sugar
1/2 c butter
1 cup flaked coconut (optional)
