How To make Pineapple Pound Cake
1/2 c Butter or shortening
3 lg Eggs
1/2 c Unsweetened frozen pineapple
Juice concentrate, thawed 1/2 c Water
2 1/2 c White flour
1 ts Baking soda
1 ts Baking powder
In a large mixing bowl beat together butter (or shortening), eggs, pineapple juice concentrate, and water until thoroughly blended. Add flour, baking soda, and baking powder; beat just until blended.
Spoon mixture evening into a 9" x 5" oiled and floured loaf pan. Bake in a preheated oven at 350 degrees for 45 minutes or until knife inserted comes out clean. Cool on a wire rack.

AN EXTRA-LARGE TUBE PAN REQUIRED
1 CUP SHORTENING
3/4 CUP SALTED BUTTER (ROOM TEMPERATURE)
3 CUPS GRANULATED SUGAR
9 RAW EGGS
3 CUPS ALL-PURPOSE FLOUR
2 TSP. BAKING POWDER
1 TSP. SALT
2 TSP. VANILLA FLAVORING
20 OZ. CAN CRUSHED PINEAPPLE
1/2CUP BROWN SUGAR
Preheat the oven to 350 degrees.
Pour half of the can of pineapple into a separate bowl. Using amixer,mix shortening, butter until creamy. Add sugar and beat until fluffy.Now add eggs one at a time. Add baking powder & salt. Add flour 1/2 cup at a time. Add flavorings.Mix on medium low speed for 2 minutes tops. Mix in ½ can of pineapple. Spread ¼ stick of room temperature butter in bottom of tube pan (not a two part pan, should be solid) Spray pan with cooking spray well including inside flute. Add brown sugar around bottom. Partially drain the remaining pineapple and add to bottom of pan evenly. Press down flat. Fill pan ¾ full with cake batter. Bake for 30minutes at 350 degrees. Now turn the oven down to
325 degrees and bake for 35-40 more minutes.

Mix
3 c sugar
3 sticks unsalted butter
6 eggs
six ounces of cream cheese
1/4 ricotta cheese
1/4 tea lemon extract
2 tea vanilla extract
1 c undrained crushed or puree pineapple
1/4 salt
2 tea baking powder
3 c all purpose or cake flour
Icing
3 c powder sugar
1 tea butter
1/8 salt
1 tea vanilla
1 tbsp milk
1 tbsp undrained pineapples

OMG! This Pineapple Pound Cake is so good!! The light fruity pineapple flavor paired with the sweet cream cheese glaze it a wonderful pair. Make this cake for the upcoming holidays or just as a Sunday soul food treat. I think most pound cakes taste better the next day as the flavor really develops.
Ingredients:
3 sticks of unsalted butter, softened
3 cups sugar
5 eggs ,room temperature
3 cups cake flour
1 teaspoon baking powder
1 cup evaporated milk
1 can 20 oz crushed pineapple
2 teaspoon pineapple or orange extract
1 tablespoon vanilla extract
1 teaspoon salt
Cream cheese glaze:
4 oz cream cheese softened
2 cup powdered sugar
2 Tbsp crushed pineapple with juice
1 teaspoon pineapple or orange extract
1 teaspoon vanilla extract
2-3 tablespoons pineapple juice
Cooking time can vary from 60-75 minutes. Please check at the 60 minute mark with a toothpick. Adding the reduced juice is optional.

Pineapple Pound Cake Recipe: The Ultimate Pineapple Pound Cake
Today's video will be an easy pound cake recipe. We will be making a pineapple pound cake with a pineapple filling and pineapple glaze. This pineapple pound cake recipe is super easy, and even a beginner can make it. My simple pound cake recipe will help you understand how to make a pineapple cake. There are a variety of pound cake recipes, and pound cakes are very versatile. Within this video, I'll be showing you how to make a pound cake for your holiday dessert. My homemade pound cake is a pound cake from scratch. I wouldn't say this is the best pound cake recipe. However, you won't be disappointed either. I hope that after watching, you'll know and understand how to make pound cake and that it's not super hard to make.

Pineapple Pound Cake Recipe
3 cups all-purpose flour
3 sticks unsalted butter
2 1/2 cups granulated sugar
5 large eggs
8 oz sour cream (1 cup)
20 oz can crushed pineapple in 100% pineapple juice ( 1 1/2 cup)
1/4 pineapple juice
1/2 teaspoon salt
1/2 teaspoon baking powder
Preheat oven to 325°
In a bowl sift flour, baking powder, and salt together and set aside.
In a bowl drain the juice off the crushed pineapple and reserve the juice.
In another bowl combine 1 cup of sour cream, 1 1/2 cup of drained crushed pineapple and 1/4 pineapple juice. Mix well and set aside.
Add 3 sticks of unsalted butter (room temperature) to your mixer and mix on medium until it's smooth.
Slowly add your sugar while mixing (1 cup at a time) and mix on medium for 4-5 minutes.
Add one egg at a time and incorporate after each egg. Mix well.
Put mixer on slow/low speed and start to add your flour 1 cup at a time. You want to alternate between your flour and sour cream mixture. Add flour 3 times and sour cream mixture 2 times.
Stop mixing, push down your sides and then add 1 teaspoon on vanilla flavor or extract. Mix in well.
Grease you bundt or angel food cake pan. Put cake batter into your pan and bake at 325° for 1 hour in 20 minutes or until toothpick inserted into center and comes out clean. If the cake isn't brown enough for you, bake for a few additional minutes.
Once the cake cools off completely, add pineapple glaze and give it a few minutes to settle in, before adding your glaze.
Add glaze and enjoy your pineapple pound cake!
Pineapple Glaze
1/3 cup sugar
1/3 cup pineapple juice
You can heat this in the microwave for 1 minute or do it on top of the stove.
Pineapple Glaze
2 cups of powdered sugar
4 tablespoons of pineapple juice
1 teaspoon of vanilla extract or flavor
