How To make Pineapple Cheese Pie
1/4 c Cold milk
1 Unflavored gelatin
1/2 c Milk
2/3 c Sugar
1/8 ts Salt
8 oz Commercial cream cheese
; softened/cubed 1 tb Lemon juice
1 ts Vanilla extract
8 oz Commercial sour cream
8 1/4 oz Crushed pineapple; undrained
1 Graham cracker crust

Combine 1/4 cup cold milk and gelatin in container of an electric blender; process at low speed to soften gelatin. Heat 1/2 cup milk in a small saucepan; add to gelatin mixture and process until gelatin granules dissolve. Scrape sides of blender with spatula. Add sugar and next five ingredients; blend until smooth. Drain pineapple, reserving 3 tablespoons syrup. Add reserved syrup to blender mixture; process until smooth. Pour into crust. -----

Pineapple cream cheese pie!
Pineapple cream cheese pie! We needed something light and delicious for a dessert this week and its so easy its mix in the mixer and put in your pie crust and let it chill in the fridge for 3 hours or overnight! I did a graham cracker crust.You can buy a pre made crust. It's cheaper for me to buy the graham cracker crumbs, butter and sugar and bake for 10 mins @350 degrees.
1 1/4 cup graham cracker crumbs
1/3 cup melted butter
1/2 cup sugar
Preheat oven 350 degrees. Mix in a mixing bowl with a spoon and pour into your pie pan and bake for 10 mins @ 350 degrees.
While your crust is baking, start mixing your pie filling in the stand mixer or hand held mixer.
1 (8oz) block of cream cheese room temp
1/2 cup granulated sugar
1 (20 oz) can of very well drained crushed pineapple
1 (8oz) container of whipped topping; cold
Whip your cream cheese and sugar until smooth and creamy. add in your very well drained pineapple and mix until well combined.
remove your paddle from the stand mixer and add your whip topping and fold in until completely combined. Allow your pie crust to cool once removed from oven. I allowed mine to cool for 10 mins then placed into freezer for 10 mins then poured in my pie filling. I had a happy accident when I combined some of my excess graham cracker crust into my pie topping, so I took a small spoon and scooped the excess from around to edge of the pie and crumbled on top for added texture and taste. It was perfect! I look happy little accidents, they can make the best taste! Serve cold and delicious y'all!

Pineapple Cream Dessert (No Bake)
Ingredients
FILLING
• 8 oz softened cream cheese
• 8 oz tub whipped topping
• 14-16 oz large can crushed pineapple, drained
• 3/4 cup confectioner’s sugar
• 1/2 cup pineapple chunks
• 1/2 cup shredded coconut for topping.
CRUST
• 1 1/2 cups graham cracker crumbs
• 1/3 cup sugar
• 1/2 cup butter melted
Instructions
1. For crust: Mix the graham cracker crumbs and sugar. Add the melted butter and stir to combine well. Press into a 8 x 8- or 9 x 9-inch pan.
2. Filling: In a large bowl, beat the softened cream cheese and confectioner’s sugar until very smooth.
3. Beat in the tub of whipped topping. Then fold in the drained pineapple.
4. Spread filling on top of crust. Top with pineapple chunks and sprinkle with coconut.
5. Chill very well—at least 4 hours, preferably overnight

I've got another yummy dessert for y'all to try! This thing is good to eat any time of year, but I think it would also make a fabulous summer time dessert with all this pineapple! Make sure you try this one!!

Pineapple Dream Dessert:
1 can crushed pineapple
1 container cool whip, 8 oz
1 block cream cheese, softened
1 stick butter, melted
2 sleeves graham crackers, crushed into crumbs
2 cups powdered sugar, sifted
Start by crushing up those graham crackers. You can use a ziploc bag or a food processor to crush them up, or get some pre made crust if you want. Add the melted butter and mix really good. Set aside about 1/2 cup of the crumb mixture. Press the crust into a 9x13 pan (or 2 smaller pans like I did). Put it in the fridge until you're ready for it. In a bowl, add your softened cream cheese and go ahead and blend it with your stand or hand mixture till it's kinda smooth. Then add your sifted powdered sugar in a little at a time until it's well combined. Sit it to the side. In another bowl, add your cool whip. Drain the crushed pineapple. Add half to each bowl and mix well. Take your crust out of the fridge and layer the cream cheese mixture and then the cool whip mixture. Be careful when spreading each layer. Sprinkle the reserved crumbs over the top. Put in the fridge for at least 4 hours. I put mine in there overnight.
