--------------- PEA PICKIN' CAKE RECIPE (Recipe adapted from Deana Muns A Book Of Favorite Recipes Compiled by The Reaching Out Group, Sardis United Methodist Church, Sardis Georgia)
Cake: 1 box yellow cake mix 1 15oz can mandarin oranges (including juice) 4 large eggs 1/2 cup cooking oil
Put all ingredients in mixing bowl and mix well with a hand mixer to break up the mandarin oranges into smaller pieces. Pour into a buttered 9x13 baking pan. Bake for 30 minutes at 350ºFm or until a toothpick inserted into the center comes out clean. Allow to cool completely at room temperature.
Combine pineapple with juice, pudding mix, and thawed whipped topping and mix well with a whisk. Spread evenly on top of completely cooled cake. Cover tightly with plastic wrap and refrigerate overnight or at least 2 hours before serving. Store in refrigerator and serve chilled.
