Pig Pickin Cake Recipe
There are so many things that I loved about growing up in the South but my favorite thing would be all of the gatherings we had on a regular basis. Whether it was a pig pickin, fish fry, church picnic or family reunion, food was always at the center of those gatherings. I grew up in Eastern North Carolina and pig pickins’ were a huge part of my childhood. A pig pickin' is a type of party or gathering held primarily in the American South which involves the barbecuing of a whole hog. This pig pickin cake is normally a staple dessert at a pig pickin which is why it has the name of pig pickin cake. This cake is unique because the icing on the cake isn‘t a buttercream but is the combination of drained crushed pineapple, instant vanilla pudding mix and cool whip. This delicious orange and pineapple cake recipe comes from an old church cookbook my grandmother gave me. This is her recipe for PEA PICKIN' CAKE (sometimes called Pig Picking Cake.) This old southern cake is moist, fluffy and light, and lives in the refrigerator - ready to be enjoyed on a warm spring day. I've included my updated recipe below that adjusts the ingredient amounts to more modern product package sizes. Enjoy!

PEA PICKIN' CAKE RECIPE
(Recipe adapted from Deana Muns
A Book Of Favorite Recipes
Compiled by The Reaching Out Group, Sardis United Methodist Church, Sardis Georgia)
Cake:
1 box yellow cake mix
1 15oz can mandarin oranges (including juice)
4 large eggs
1/2 cup cooking oil
Put all ingredients in mixing bowl and mix well with a hand mixer to break up the mandarin oranges into smaller pieces. Pour into a buttered 9x13 baking pan. Bake for 30 minutes at 350ºFm or until a toothpick inserted into the center comes out clean. Allow to cool completely at room temperature.
Frosting/Filling:
1 15oz can crushed pineapple (including juice)
1 3.4oz box instant vanilla pudding
12oz frozen whipped topping, thawed (Cool Whip)
Combine pineapple with juice, pudding mix, and thawed whipped topping and mix well with a whisk. Spread evenly on top of completely cooled cake. Cover tightly with plastic wrap and refrigerate overnight or at least 2 hours before serving. Store in refrigerator and serve chilled.
(Recipe may also be baked in four 9 cake pans and assembled with frosting between layers. Shredded coconut and/or chopped walnuts or macadamia nuts are optional.)

This cake is called by 3 different names....Mandarin Orange Cake, Pea Pickin' Good Cake, and Pig Pickin' Good Cake. It really doesn't matter what it's called as long as you know that it is DELICIOUS! I did some research to find out why it would be called Pig Pickin' Cake and found that it got the name because it was very common at pig roasts and barbecues in the south. Guest picked the tender meat off the cook pig, which is how a Southern barbecue became known as a pig pickin'. This mandarin orange cake became a regular on the dessert table of most of these pig roasts and thus became a Pig Pickin' Good Cake. I'm glad I found this bit of history behind the name of the cake. You decide what you want to call it, but I am sure you will want to make it again and again.
