If you’ve ever had classic pierogi (and even if you haven’t) you’ll be blown away by our pierogi lasagna. Traditionally, pierogi are dumplings from Eastern Europe filled with potatoes, cheese, and a variety of meats and veggies. While they are extremely delicious, making the dough and hand-forming each dumpling can be time and labor-intensive.

This is a short cut recipe that ReRe shared with me. ReRe is Ron’s cousin on his father’s side. Pierogi was introduced to me when I first visited Aunt Anna (ReRe’s mom) in Wilkes Barre, PA. Pierogi are filled dumplings, not unlike Italian ravioli. The difference is in the fillings and flavorings. Pierogi can be served as appetizers or entrees, filled with savories such as sauerkraut, cheese, mashed potato, kielbasa, and mushrooms. Thank you ReRe for sharing this recipe and the memories from your mom and aunts and especially for Aunt Lottie who taught Aunt Anna how to make Pierogi. The actual Pierogi dough and filling will be in a future video.
Blessings, Terri
