Today I am making another great Summer and No Bake Dessert recipe that everyone will love and enjoy at your next BBQ Cookout, Picnics, Fish Frys and more; Cherry Cheesecake Pie AKA Cherry Cream Cheese Pie!
Simple and easy, creamy, refreshing, and bursting with Cherry flavor; everyone will be going back for seconds!

Graham Cracker Crust
2 cups graham cracker crumbs
1/4 cup white sugar
7 tablespoons unsalted butter, melted and cooled
Filling
1 (8 ounce) package cream cheese or 1 (8 ounce) tub cream cheese spread, softened
1 (14 ounce) can sweetened condensed milk
1/2 cup freshly squeezed lemon juice
1 teaspoon pure vanilla extract
1 (21 ounce) can cherry pie filling, chilled
1/2 teaspoon pure almond extract
Ellen’s Magic: You may use a store bought 9-Inch graham cracker crust for this recipe. You can also use blueberry, strawberry, or any kind of pie filling.
Preheat Oven to 350 Degrees
For the Crust: Crush the graham crackers until they are fine crumbs then add them into a large bowl then pour in the sugar and melted butter and stir until well combined. Pour the crust mixture into a greased 9-inch deep dish pie plate and press evenly and firmly into the bottom and sides. Bake for 7 to 8 minutes. Remove from the oven and cool completely on wire rack.
For the Filling: In a large bowl using a electric mixer, add the cream cheese and cream on medium speed until fluffy. Next add in the sweetened condensed milk and continue mixing until well combined. Add and mix in half the lemon juice then add and mix in the other half, and add in the vanilla extract and continue to mix until well incorporated. Pour the filling into the cooled crust. Place the pie into the refrigerator and let it chill overnight, until well firm and set. The next day, add the almond extract into the cherry pie filling and mix until well combined. Pour the cherry filling on top of the pie and spread evenly. Cut into desired slices, serve with whipped cream (if desired) and enjoy!

No Bake Cherry Delight
This is an old recipe that mom got from a lady who she's known for years. She recently celebrated her 91st birthday I believe, so this recipe goes way back. It is a very easy dessert to throw together and your family will love it. Best of all, you can change the topping up to whatever kind of fruit you'd like. It is another simple and delicious recipe from mom. Let me know what you think about this version and y'all enjoy.

Ingredients:
Crust:
1 1/2 cup crushed graham cracker crumbs
1 1/4 stick of butter melted
Combine these and push into the bottom of a prepared 9x13 baking dish
Bake for 10 minutes at 350°F
Remove from oven and let cool before placing filling.
Filling:
8 ounces Cream Cheese room temperature
1/2 cup sugar
8 ounces Cool Whip 1 container (mom made whipped cream*)
1 teaspoon vanilla extract
2 cans cherry pie filling
Mix ingredients together (minus pie filling) with a hand mixer till well incorporated.
Spread evenly over the graham cracker crumbs.
Now spread the cherry pie filling over the cream cheese filling.
Refrigerate 2-3 hours (or overnight) before serving.
*Whipped Cream:
16 ounces heavy whipping cream
Blend with hand mixer or stand mixer till heavy peaks appear

Ingredients
Egg - 4
Oil - 1 cup
Sugar - 1 cup
Flour - 1 1/2 cup
Baking Powder - 3 tsp
Desiccated Coconut - 1/2 cup
Milk - 3 tbsp
Method
1. Beat egg whites, sugar, salt and beat till soft peaks.
2. Beat egg yolks, oil and add flour, baking powder, coconut, milk and combine.
3. Fold in egg whites.
4. Bake in 180 degrees preheated oven for 50 minutes.
5. Beat butter, sugar and pastry cream for the frosting.
6. Frost the cake with pastry cream frosting and cover with desiccated coconut.
7. Decorate with waffle cone and snowman.

Cherry Cream Cheese Pie
Marie is making this cherry cream cheese pie. This a favorite pie for our entire family. Marie always makes it for all of our gatherings. This is another video for our Holiday Food Series. Cherry Cream Cheese Pie
Ingredients:
1 Graham cracker pie crust 9 inch
1 Philadelphia Cream Cheese 8 oz.
1 Can Eagle Brand sweetened condensed milk
1/3 cup lemon juice
1 tsp vanilla flavoring
1 Can cherry Pie Filling
Directions:
Mix the cream cheese and condensed milk together
Add the lemon juice and vanilla flavoring, mix until smooth
Put the cream cheese mix into the pie crust
Refrigerate 3 to 6 hour until the cream cheese sets
Put the cherry pie filling on top
Refrigerate until ready to serve ( I usually let it refrigerate overnight)
Serve and Enjoy !!!
