How To make Picnic Cupcakes
18 1/2 Ounce Pkg. Chocolate Or Yellow Cake Mix
Filling: 8 Ounces Cream Cheese
softened
1 Egg :
lightly beaten
1/3 Cup Sugar
1 Cup Semisweet Chocolate Chips -- (6 ounces)
Mix cake according to pkg. directions. Spoon batter into 24 greased or paper-lined muffin cups, filling two-thirds full. In a mixing bowl, beat cream cheese, egg and sugar until smooth. Fold in the chips. Drop by tablespoonfuls into batter. Bake at 350 F. for 20 minutes or until cupcakes test done.

Recipe: (Adapted from:
1/2 cup cocoa powder
3/4 cup plain flour
1/2 tsp baking soda
3/4 tsp baking powder
2 eggs
1/2 cup brown and white sugar
1 tsp vanilla extract
1/3 cup vegetable/canola oil
Buttercream frosting:
1/2 cup softened butter
2 cups icing sugar
1 tsp vanilla extract
Squeeze of lemon juice (balance out the sweetness)
Pinch of salt
1 tbsp milk

Follow the directions on the cake mix but add milk instead water and 1 extra egg. Bake as directed on the box.

*Banana Bread*
All purpose Flour 1 cup & 3/4 cup
3 ripe Bananas
2 Eggs
1.5 cups sugar
1/2 cup vegetable oil
1/4 cup milk
1 teaspoon Baking Soda
1 teaspoon Vanilla Essence
Option: sprinkle 1 teaspoon Cinnamon powder on top. Add chopped Walnuts.
Preheated oven 325 degrees Fahrenheit
For 1 hour 5 minutes or until skewer comes out clean.
*Chocolate Cupcakes *
Makes 12 cupcakes
AP flour 1 cup
Cocoa powder 1/2 cup
Sugar 1 cup
Baking SODA 1/2 teaspoon
( soda bicarbonate)
Salt 1/4 teaspoon
Warm Water 3/4 cup
Cooking oil 1/2 cup
Egg 1 Large
Vanilla essence 1 teaspoon
190 degrees Centigrade for 15 minutes.
(time varies if making smaller cupcakes)

These decadent, moist chocolate cupcakes are filled with vanilla cream and frosted with a layer of chocolate icing- don’t forget that iconic squiggle! Pack them in your lunchbox on-the-go, picnic snack, or at-home treat your family will always want around the house after school/work!

Recipes
Chocolate Cupcakes:
-1 1/4 cups Flour
-1/2 tsp Baking Powder
-1/4 tsp Baking Soda
-1/2 tsp Salt (or to your liking)
-1/2 cup Granulated Sugar
-1/4 cup Brown Sugar
-1 tbsp Vanilla Extract
-1 Egg + 1 Yolk
-1/4 cup Milk + 1 tsp White Vinegar
-Hot Water + 1 tbsp Instant Coffee
-1/2 cup Unsweetened Cocoa Powder
-1/3 cup Sour Cream
-1/3 Cup Semi-sweet Chocolate Chips
-2 tbsp Butter
-2 tbsp Vegetable Oil
*Tips
-Fill your cupcake pan half way! Avoid overfilling, this will create a peaked top on your cupcake (think volcano top!)
-Bake at 300 for 20-23 minutes! Low and slow also helps to prevent a volcano top
Vanilla Cream Filling:
-3/4 cup Milk
-1/4 cup Flour
-1/2 cup Butter
1/3 cup Shortening
1 tbsp Clear Vanilla Extract
-1 cup Powdered Sugar
*Tips
-Continuously Whisk your Flour and Milk on medium heat, monitor to prevent burning/browning
- It is really helpful to use a cupcake corer when filling your cupcakes! Gadget can be found here:
-Core cupcake from bottom to avoid leaving lines on the top
Chocolate Icing/Glaze
-2 tbsp Cocoa Powder
-1/2 cup Powdered Sugar
-4 tbsp Hot Water
-1/2 cup Semi-sweet Chocolate Chips
-1/8 tsp Salt
-1/2 tbsp Corn Syrup
-1/2 tbsp Clear Vanilla Extract
*Tips
-Work quickly when frosting cupcakes! This icing sets much quicker than chocolate ganache. If it hardens no worries, microwave for 5 seconds and stir. If it is still too thick, add 1/4 tsp of crisco and microwave for an additional 5 seconds, then stir
-Use any store bought decorator icing for piping the squiggle pattern. I like using the Betty Crocker since it can be used straight out of the tube, no need to adjust the consistency. A decorator Tip # 3 was used and can be found here!
