1.00 sm Avocado 1.00 Egg; slightly beaten 0.50 c Sour milk 1.00 c Unbleached white flour 1.00 c Whole-wheat flour 0.50 ts Baking soda 0.50 ts Baking powder Dash of salt 0.75 c Sugar (scant) 1.00 c Pecans; chopped-ONLY pecans Mix all ingredients except first 3 in large bowl. Mash avocado; add egg and sour milk. If flour mixture is very dry, add another egg. Combine avocado mixture with flour mixture; stir only to moisten all flour. Pour into loaf pan or 4 mini loaf pans. Black Food Matters - Thanks to the dedicated volunteer residents at Midtown Park Apartments located in San Francisco's historical Fillmore district, Midtown Park residents during the pandemic quarantine receive a free bag of groceries weekly.
Free food bags are donated by San Francisco Neighbor's Solidarity Network, The Village Project a Black woman led Fillmore community organization and SF-Marin Food Bank - delivered by Kalco.
Spicy Black Bean Burgers 1 15.25 oz. can black beans drained, rinsed and dried 1 small zucchini, shredded to equal 1 cup 3/4 cup of plain dry bread crumbs (Panko) 1/4 cup chopped green bell peppers 1 teaspoon onion powder 2 teaspoons garlic powder 1 heaping tablespoon taco spices 1/4 cup chopped Italian parsley salt to taste l large egg, beaten 3 tablespoons coconut oil for frying
Mash beans with potato masher or by hand Mix all other ingredients and form into 4 patties Fry in coconut oil 10 minutes per side on medium to medium low heat Patties should be brown and crispy on both sides.
Serve on whole wheat pita bread that has been split, coat each side with sauce. Sauce: 4 tablespoons fat free sour cream 1 teaspoon chipotle Pepper Adobo Sauce Top burgers with tomato, lettuce and add avocado slices around perimeter of bread.
These burgers were very good. They both looked and tasted like a regular hamburger. The zucchini helped them to remain moist and the sauce gave a little punch to the whole meal. This makes one really hearty meal.
