1.00 sm Avocado 1.00 Egg; slightly beaten 0.50 c Sour milk 1.00 c Unbleached white flour 1.00 c Whole-wheat flour 0.50 ts Baking soda 0.50 ts Baking powder Dash of salt 0.75 c Sugar (scant) 1.00 c Pecans; chopped-ONLY pecans Mix all ingredients except first 3 in large bowl. Mash avocado; add egg and sour milk. If flour mixture is very dry, add another egg. Combine avocado mixture with flour mixture; stir only to moisten all flour. Pour into loaf pan or 4 mini loaf pans. Inspired by my favorite daughter, Isabella, this was a super-easy and very tasty lunch with the Ravishing Mrs. Ritter. This makes 2 good sized portions. You can use any bread you like, but we find sourdough tastes the best for us. Ingredients: 1 ripe avocado 1 tablespoon olive oil juice from 1 lemon wedge salt and pepper to taste hot pepper flakes to garnish 2 slices of toasted sourdough bread
Directions: 1. In a large bowl, scoop out avocado and mash up with a fork. 2. Mix in the olive oil, salt and pepper, and lemon juice, and stir until well mixed together. 3. Spoon over toasted sourdough bread and sprinkle with hot pepper flakes to taste.
