Pfeffernusse Cookies: these German holiday cookies are similar to American gingerbread cookies, but are filled with extra spices and tossed in powdered sugar!
Pfeffernusse (spice cookies) Something Vegan Christmas Treats Week
RECIPE
1/2 cup organic brown sugar
1/4 cup neutral oil
2 Tbsp. non-dairy milk
2 Tbsp. molasses
1/2 tsp. anise extract
1 1/2 cup all-purpose flour
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground allspice
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
1/8 tsp. ground black pepper
Glaze:
1 1/2 cup organic powdered sugar
1-2 Tbsp. hot water
Preheat oven to 350 degrees Fahrenheit. To a bowl, add brown sugar, oil, non-dairy milk, molasses, and anise extract. Stir well. Add flour, baking powder, cinnamon, ginger, allspice, cloves, nutmeg, and black pepper. Stir until a smooth dough forms. Roll the dough into balls, and place on a lined baking pan. Bake 14-16 minutes. Let cool for a couple of minutes on the pan, before moving to a cooling rack to cool completely. To make the glaze, to a bowl, add powdered sugar. Add hot water a Tbsp. at a time, whisking until smooth. Dip the cooled cookies in the glaze, and then place back on the cooling rack to set. Makes one dozen cookies.

INGREDIENTS
- 1 cup lard (or vegetable shortening)
- 1 cup molasses
- 2 cups sugar
- 1 egg
- 1/4 teaspoon real anise oil
- 1/2 cup sour milk (1 tablespoon vinegar with 1/2 cup milk)
- 2 teaspoons baking soda
- 6 cups flour
DIRECTIONS
In the bowl of a stand mixer, mix the lard and molasses, 30 seconds. Add the sugar, egg, anise oil, sour milk, and mix well, 1 minute. Add baking soda and flour and mix until only a few streaks of flour remain, 1 minute.
Shape into cylindrical rolls approximately 1/2-inch to 3/4-inch in diameter. Chill overnight and cut into 1/4-inch pieces.
Preheat oven to 350 degrees Fahrenheit. Place on a parchment-lined baking sheet and bake for 10-12 minutes. Remove from oven and let cool on pan for 5 minutes. Using a spatula, scrape the peppernuts into an airtight container. Store for up to 3 three months in the freezer.

Pfeffernüsse Recipe:
90g Butter
90g Sugar
1x Egg
100g honey
300g weizenmehl
100g almond flour
5g baking powder
2g ground cinnamon
1.5g white pepper
1.1g ground ginger
.8g nutmeg
.8g aniseed, ground2
3-4x clove, ground
For the Icing:
375g confectioner's sugar
90ml lemon juice
-Sift both flours with spices and baking powder.
-Cream the butter, sugar and egg. Add honey.
-Add the flours and knead well.
-Line a baking tray with baking paper. Preheat the oven to 150C/300F.
-Form small 20g balls of dough with your hands and place them on the baking tray with a little space between them. Bake for 15 minutes. Leave to cool completely.
-For the icing, mix all well.
-Coat the pfeffernüsse and let rest on wire rack until icing has set.
