Pennsylvania Dutch (Amish) Divine Chicken Pot Pie Recipe
I once asked my husband, What would we make for dinner if Jesus stopped by? He replied, Your Chicken Pot Pie. ????
Divine Chicken Pot Pie
(Pennsylvania Dutch - Chicken Bot Boi)
Ingredients
• 3 split chicken breasts – you can use whole chicken, thighs or whatever you prefer. I’ve used all types at some time or another.
• I use a gallon (128 ounces) of broth between the broth from cooking the chicken and bone broth in the cartons.
• Small onion and 2 stalks of celery – cut into smaller pieces ( this is to cook with the chicken)
• 6 carrots – peeled and sliced
• 1.5 pounds potatoes – approx. 6 – peeled and quartered
• Fresh or dried celery leaves – approx. 2 Tbsp
• Parsley
• Salt and pepper to taste
Pot Pie Dough
• 4 cups flour
• 3 Tbsp butter – softened
• 1 tsp baking powder
• ½ tsp salt
• 2 eggs beaten in measuring cup, add milk to the eggs to equal 1 cup. You may need a little extra liquid.
Directions
1. Place chicken in roaster with sliced onion and celery. Sprinkle with seasonings. Cover with water. Bake at 350º for 2.5 hours until fork tender. Or you can boil on top of the stove,
2. Remove chicken from roaster and cool. Strain the broth into a large pot. Add additional broth. Clean chicken and shred into pieces and add to the pot.
3. Peel and slice carrots. Peel and quarter potatoes. Add both to pot. Add celery leaves, parsley, salt and pepper. Cook over medium to medium high heat.
4. Mix pot pie dough together. It should be slightly stiff. Cut into smaller sections to roll. I prefer small sections. Sprinkle a little bit of flour; add dough section and roll out into desired thickness. Cut into squares and place in boiling broth, one layer at a time. Repeat until all squares are in pot. Cover and cook for approx.. 20 minutes.

So here ya go.
Ingredients:
4 cups cooked rice
2 cup salsa
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon dried oregano
1 can roasted peppers
1 small diced white or yellow onion or 1/2 onion and 1 green pepper
1 can corn (drained)
1 can black beans (drained/rinsed)
2 cups cooked chicken (chunk or shredded, your choice)
2 cups chicken stock
2 cups shredded cheese
2 cups tortilla chips in large pieces
Heat oven to 350 degrees.
Prepare a 9×13 baking dish and spray with cooking spray. Set aside.
Cook rice but cook al dente because it will cook more in the oven
In large bowl, combine rice, salsa, and spices
Now add in the roasted peppers, diced onion, corn, black beans, chicken, and 1 cup of the shredded cheese. Stir together to combine.
Fold in 1 cup of the tortilla chips and stir lightly to combine, trying not to break chips up to much.
Pour the mixture into the prepared baking dish and add chicken stock, cover with foil and cook for 30-35 minutes.
Now sprinkle the remaining cheese on top and crush up the remaining chips and sprinkle over the casserole.
With the tin foil off let cook an additional 10-15 minutes but watch closely so chips/cheese don’t burn.
Serve and top with additional sour cream, guacamole, salsa or whatever you like.

Amish Beef and Chicken POT PIE Recipe ~ How to Make Pot Pie Noodles
In this recipe video I show you how to make Amish beef and chicken pot pie from start to finish. The homemade pot pie noodles are doughy, eggy, rich and delicious. This is another recipe from the Pennsylvania Dutch Amish country. Not the typical meat pie with a crust but a stew like dish with a rich meat broth, veggies and wonderful homemade egg noodles called Pot Pie.

Amish Pot Pie ~ How to make Pot Pie Noodles
INGREDIENTS:
POT PIE NOODLES:
2 cups all purpose flour
1 tsp. salt
1 tbsp. shortening
2-4 large eggs
water
extra flour for rolling
Combine the above ingredients in a bowl to make
a dough. You may need to add water or more flour
to make the dough come together...making sure
all the flour is absorbed and coming off the
sides of the bowl. Will be a little sticky.
Flour surface and rolling pin very well.
Roll out dough to approx. 1/8 or more thickness.
Cut noodles. I cut into 1 1/2 to 2 square noodles.
In a saucepan bring broth up to a boil and add onions,
carrots and salt and pepper. Simmer for 15 minutes.
Add pot pie noodles stirring occasionally and bring
up to boil.
Add diced potatoes and simmer for 20-30 minutes until
potatoes are done and pot pie noodles are tender.
A very hearty and satisfying meal. Enjoy.

Easy Chicken Broccoli Noodle Casserole
INGREDIENTS:
1 package of pasta or noodles - undercooked by 1-2 minutes
1-2 pounds cubed chicken thighs or breasts
1 cup diced onion
1 cup sliced leeks - sometimes I use celery
1 cup diced mushrooms
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream
1 1/2 cups milk
2 cups grated cheese - mozzarella and cheddar
1/2 tsp. black pepper
1 tsp. poultry seasoning
1/2 tsp. celery seed
1 tsp. thyme
3-4 cloves minced garlic
salt and pepper
1/4 cup fresh chopped parsley or 1 tbsp. dried
pinch cayenne pepper - optional
1 cup cauliflower (approx.)
1 cup broccoli (approx.)
oil
Preheat oven to 400 degrees
Cook egg noodles/pasta according to package and
undercook by 1-2 minutes.
In a pan on medium high add oil, onions, leeks and
salt and pepper. Stir and cook 1 minute.
Add mushrooms and minced garlic. Stir and cook 1 minute.
Add chicken pieces, stir and cook for 5 minutes or
until no longer pink. Turn off heat.
In a large bowl add cream of chicken, cream of mushroom,
and sour cream. Stir.
Add spices and stir.
Add chicken, veggies and juices, broccoli and noodles.
Give gentle but thorough stir.
Place in a greased baking dish and level.
Cover and bake for 25-30 minutes.
Remove from oven and top with cheese.
Bake uncovered for an additional 10-15 minutes or until
cheese is melted.
Let rest for 15 minutes before serving.
Enjoy.
