Healthy Date Bars Recipe
Easiest date bars recipe. These healthy date bars are vegan, no bake, gluten free and free of refined sugar. This dessert is the perfect guilt free snack. One of the easiest recipes you can find.

Ingredients:
400g (14oz) Medjool dates, pitted
180g (6.3oz) walnuts
2 tablespoons (30g) Natural peanut butter
1 tablespoon (13g) Coconut oil
2 tablespoons (15g) Cocoa powder
1/2 cup (45g) Desiccated coconut
1-2 tablespoons Sesame seeds
1/8 teaspoon Salt
1 teaspoon Vanilla extract
Directions:
1. Prepare 8-inch (20cm) square pan. Line with parchment paper.
2. Place walnuts in the food processor and process for 20-30 seconds, until crumbly.
3. Add pitted dates, cocoa powder, coconut oil, peanut butter, desiccated coconut, vanilla extract and salt. Process until combined and sticky.
4. Turn the mixture out into the prepared pan. Sprinkle some sesame seeds. Use your hands or a spoon to firmly press the mixture into the bottom of the dish. Cover and refrigerate for 30 minutes.
5. Remove from the pan and cut into squares or bars.

Crust
2 Sticks Butter (224g) Browned
100g Sugar
1 tsp Vanilla Extract
1/2 - 1 tsp Salt (depending on your saltiness preferences)
270g All Purpose Flour
1 tsp Cinnamon
1/2 tsp Nutmeg
1 Stick Butter (112g)
100g Brown Sugar
120g Maple Syrup
30g Heavy Cream
1/2 tsp Cinnamon
1/2 tsp Salt
2 Eggs
300g Chopped Pecans
Brown the butter and let it cool for 10-15 minutes, mix in the other ingredients and spread out evenly onto a 9x13 deep baking tray. Bake at 350°F for 15-20 minutes depending on how crunchy you want the crust.
For the filling, melt the butter and add the brown sugar, maple syrup and cream and bring to a boil. Meanwhile whisk up your eggs. We have to temper the eggs, this means you're going to ladle in some of the hot mixture into the eggs while whisking. This is going to slowly bring up the temperature so that they seamlessly mix into the mixture and don't end up as scrambled eggs. After you ladle in about 1/2c of the hot mixture into the eggs, you can add the egg mixture back into the main mixture. At this point just throw the pecans in (chopped however big or small you want) and pour the filling over the crust. Bake at 350°F for 30-35 minutes, cool for an hour or two, slice into bars and enjoy!

Ingredients:
For the oat crust:
2 cups (180g) Rolled oats
1 cup (125g) All-purpose flour
3/4 cup (150g) Light brown sugar
3/4 cup (170g) Softened Butter, cubed
1/2 teaspoon Ground cinnamon (optional)
1/4 teaspoon Salt
1/2 teaspoon Baking soda
For the date filling:
400g (14.1oz) Medjool dates, pitted
1 cup (240ml) Water
1 teaspoon Vanilla extract
1 tablespoon Lemon juice
Directions:
1. Place dates, water and lemon juice in a small saucepan. Bring to a boil, stirring occasionally. Reduce the heat and simmer for 5-8 minutes, stirring occasionally, until the dates are soft. Remove from heat and add vanilla extract. Let cool to room temperature.
2. Preheat oven to 350F (175C). Line a 9-inch (23cm) square baking pan with a strip of parchment paper. Set aside.
3. Make the crust: In a large bowl, combine oats, flour, salt, brown sugar and baking soda. Add the butter and mix until crumbly.
4. Press 2/3 of the mixture into the bottom of the baking pan. Spread the filling over the base, Sprinkle the remaining oat mixture.
5. Bake for 25-30 minutes, until golden brown. Let cool completely, then refrigerate for at least one hour before cutting into squares.
