Easy Recipe for Peanut Butter and Jam Squares
Betty's Old Standby Chewy Peanut Squares
Betty demonstrates how to make her Old Standby Chewy Peanut Squares. These are made by pouring a tasty peanut butter sauce over cereal flakes, then cutting them into individual serving pieces once they are set up.
Old Standby Chewy Peanut Squares
½ cup butter
¾ cup white syrup or Karo's light corn syrup
¾ cup sugar
1 teaspoon vanilla
¾ cup creamy peanut butter
4 cups Special K or cornflakes cereal (I used Special K with chocolate pieces.)
Place ½ cup butter, ¾ cup white syrup or light corn syrup, and ¾ cup sugar in a medium to large pot. Place over medium heat, and bring to a boil. Boil 2 ½ minutes. Remove from heat and add 1 teaspoon vanilla and ¾ cup creamy peanut butter. In a large bowl, place 4 cups of Special K or cornflakes cereal. Pour the peanut butter sauce mixture over the cereal and mix thoroughly. Press into a 9-inch square pan. Let sit at room temperature for about half an hour, and then refrigerate for another half-hour. Cut into 16 squares and place on a nice serving dish. These keep well at room temperature throughout the day, but for longer storage, you may refrigerate or freeze them. This is a great pick-up dessert for a party! I hope you love it! --Betty ♥

Makes 6-8 cups
Ingredients:
225g (8oz) Dark chocolate
5 tablespoons (70g) Coconut oil (for the chocolate mixture)
1/2 cup (125g) Natural creamy peanut butter
3 tablespoons (42g) Coconut oil (for the peanut butter mixture)
Directions:
1. Prepare 8* silicone muffin cups or paper cupcakes liners.
2. Chop the chocolate and place into a heatproof bowl, add half of the coconut oil.
3. Set the bowl over a pot with simmering water (double boiler). Melt the chocolate completely, turn the heat off, leave the bowl on the pot to keep the chocolate warm and melted.
4. In a separate bowl mix together peanut butter with the remaining coconut oil.
5. Fill each muffin cup with 1-2 tablespoons of melted chocolate and place in the freezer for 15 minutes, until set. Then, pour 1-2 teaspoons of the peanut butter mixture to each cup and place in the freezer for another 15 minutes. Then, pour another portion of melted chocolate on the top of the peanut butter layer. Place in the fridge until set.
Notes:
• In the video I used 6 muffin cups for this quantity, BUT they coming pretty big for one person, so I highly recommend to divide the filling among 8 cups. Make sure the chocolate layers are not too thick, otherwise it will be too hard to bite.
• Store the cups in the fridge, if you store them in the freezer, place in room temperature 30 minutes before serving.
• For the chocolate layers, you can use combination of dark and milk chocolate, or just milk chocolate.

CHOCOLATE PEANUT SQUARES
Ingredients
200 grams milk chocolate, cut into pieces
125 grams roasted peanuts, roughly chopped
200 grams butter
300 grams refined flour
100 grams castor sugar
2 tablespoons milk
400 ml dulce de leche (boiled condensed milk)
Method
1. Preheat oven at 180ºC. Line a glass baking dish with parchment paper.
2. Combine butter, flour and castor sugar in a bowl and mix well. Line the dish with prepared mixture and level it out. Put the dish in preheated oven and bake for 20 minutes. Remove from oven and cool.
3. Take chocolate in a bowl and cook on double boiler. Add milk, mix and cook till chocolate melts.
4. Spread the dulce de lecheevenly over the baked butter-refined flour mixture. Top with chopped peanuts and spread the melted chocolate evenly. Refrigerate for 2 hours.
5. Cut into squares and serve.
Preparation Time:2-3 hours
Cooking Time: 25-30 minutes

Chewy Peanut Butter Bars - only 6 ingredients!
Chewy Peanut Butter Bars
1/2 cup (1 stick) butter
1/2 cup creamy peanut butter
1 1/2 cups sugar
1 cup all-purpose flour
2 eggs, lightly beaten
1 teaspoon vanilla extract
*powdered sugar to dust on top, if desired
In a large saucepan, melt the butter and peanut butter. Remove from the heat; gradually add sugar and flour and mix well. Stir in the eggs and vanilla.
Spread into a greased 13 x 9” baking pan.
Bake at 350° for 28 to 32 minutes or until lightly browned and the edges start to pull away from the sides of the pan.
Dust with powdered sugar on top after the bars have completely cooled, if desired.
