Meatballs & Dumplings 1930 Depression Era Recipe - Old Cookbook Show - Glen & Friends Cooking
I know... this is called Meatballs & Dumplings, but it's more like a cross between a Hamburg Steak Recipe, and a Salisbury Steak Recipe. It is a hearty filling meal that will extend your food budget in trying times.
Meatball Ingredients:
1 pound ground beef
1 onion, minced
2 Tbsp flour
Salt and pepper to taste
1/2 cup milk
1 onion, sliced
2-3 carrots, sliced lengthwise
1 rib celery, chopped
Butter / oil for frying
Dumplings Ingredients:
1 cup flour
2 tsp baking powder
1/3 tsp salt
½ Tbsp butter
½ cup milk +
Method:
Mix meat, minced onion, salt, pepper, flour and milk.
Shape into patties.
In a heavy 9-10” pan with a lid - heat some butter and sear the patties on both sides.
Remove patties to a plate, and quickly fry off the other sliced onion.
Place the patties back into the pan, and pour in enough water to cover.
Put on the lid and simmer ½ hour.
Make the Dumpling dough, by combining all of the ingredients.
Dough should be slightly tacky, so adjust flour or milk to compensate.
After ½ hour, add the carrot and celery to pan with the meat, and cook until veg is tender.
Remove patties and veg to a serving platter, and drop walnut sized balls of dumpling dough into the gravy.
Cover and boil 10 minutes.
Serve patties and dumplings with the pan gravy and veg.

What's In My Fridge? // Food at 16 Months Post-Op | My Gastric Bypass Journey
I had RNY Gastric Bypass on December 1, 2020 at Mexico Bariatric Center in Tijuana Mexico with Dr. Rodriguez Lopez. Take a peek into my fridge and pantry to see what kind of food I buy and what kind of food is in my house, 16-or-so months post-op. This is real life, what I eat, what I buy, and what I have around my house at any given time!
I am not a nutritionist or a dietitian, so please don't take this information as the way you should be eating or the proper way to do anything by any means. I am just a girl trying to follow her nutritionist's advice as best she can while living her life in a sustainable way that will hopefully lead to long-term success. I'm not perfect and that's okay!

Caulieflower, as bread?!

I've been trying to find the different versions of Outer Aisle Cauliflower Thins and all I can find are plain so I decided to try and make my own and I think I came up with my own version.

I find them at Costco in a two-pack
Here is my recipe:
2 cups riced cauliflower (1 head cut into florets, par-cooked, pulsed in food processor)
1 large egg + I egg white
½ cup sweet onions, chopped and squeezed of liquid
⅔ cup parmesan cheese or combination of cheeses
Salt and pepper
½ cup pork rind crumbs or your favorite low carb crumbs
Place all ingredients into food processor fitted with S blade. Easiest if you put cauliflower*, parmesan (or other cheese) into machine work bowl first, pulse together, then add remaining ingredients and crumbs last.
Put the mixture into the refrigerator for ½ hour or more. When you take it out, preheat air fryer at 385 for 4 minutes. Scoop two onto a silicone mat or punched parchment paper.** Take a piece of parchment and flatten each thin into two exact rounds. Place in air fryer basket and cook for 6 minutes. Flip over and cook for another 5 minutes.***
Carefully remove and bake another batch. Should make 6. The thicker you make them the better they will stay together.
Makes 6
*Put cauliflower into a kitchen towel and squeeze out liquid first).

***Easiest way is to carefully remove silicone mat and take a spatula and flip them and then put it back into air fryer.
