How To make Peanut Butter Oatmeal Chippers
1 c Butter or margarine;
-softened 1 1/2 c Sugar
1 Egg
1/4 c Water
1 ts Vanilla extract
1 1/2 c All-purpose flour
1/2 ts Baking soda
1/2 ts Salt
1/2 ts Ground cinnamon
1/2 ts Ground nutmeg
3 c Quick-cooking oats; uncooked
1 c Pecans (optional); chopped
1 c Peanut butter morsels
Recipe by: Southern Living
Cream butter; gradually add sugar, beating at medium speed of an electric mixer until light and fluffy. Add egg, and beat well; add water and vanilla, mixing well. Combine flour, soda, salt, cinnamon, and nutmeg; add to creamed mixture, mixing well. Stir in oats, pecans, if desired, and peanut butter morsels. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets. Bake at 350 degrees for 10 to 12 minutes or until lightly browned. Cool slightly on
cookie sheets; remove to wire racks to cool completely. -----

Peanut Butter Chippies!
Ingredients:
3/4 cup Rolled Oats
1/2 cup Unsweetened Non-Dairy Milk
10 Medjool Dates, pitted
1/2 cup Natural Peanut Butter
3/4 cup Brown Rice Flour
1 teaspoon Baking Powder
1/2 cup Vegan Dark Chocolate Chips
In a food processor add the oats and milk. Let sit for a few minutes before adding the rest of the ingredients except for the chips. Process until well combined. Scoop out cookie dough onto parchment paper. Press chips into each cookie. Slightly flatten each cookie and bake at 350°F for 15 minutes. Let cool before enjoying.

●1/3 cup light brown sugar
●1/4 cup applesauce
●1 egg white
●1 teaspoon vanilla
●2/3 cup whole-wheat pastry flour
●1/2 cup oatmeal
●1/4 teaspoon salt
●1/4 teaspoon ground cinnamon
●1/4 cup chopped dried cherries
●1/4 cup chopped dried apricots
●1/4 cup lightly toasted walnuts
●2 ounces dark chocolate, cut into chunks
●Cooking spray
