INGREDIENTS
- 2 cups peanut butter
- 1/2 cup butter, melted and slightly cooled
- 1 1/2 tsp vanilla extract
- 3 1/2 cups powdered sugar
- 3 cups rice cereal
- 1 lb bittersweet chocolate
INSTRUCTIONS
In a large bowl, combine the peanut butter and melted butter. Stir until combined and smooth. Stir in the vanilla and powdered sugar. Mix until incorporated. Add in the rice cereal and combine until evenly mixed.
Using a 1 tbsp-size cookie scoop, make the balls. Roll in hands to create smooth, even balls and set on a parchment-lined baking sheet. Once all balls are made, set in the refrigerator to chill for 20 minutes.
While the balls are chilling, melt the chocolate with 1 tbsp of coconut oil in a bain-marie.
Once the chocolate and coconut oil are melted, remove the peanut butter balls from the refrigerator. One at a time, roll the balls in the melted chocolate, allowing the excess chocolate to drip off. Set the dipped balls back on the parchment paper and sprinkle with flaky salt. Cool for 10 minutes and enjoy.

PEANUT BUTTER BON BONS
Makes 20-24 bon bons
Ingredients
1 cup creamy peanut butter
1/4 cup coconut flour
2 tbsp honey
1 cup puffed rice
1 cup chocolate chips
½ tsp salt
Directions:
1. In a medium-sized bowl, add peanut butter, coconut flour, honey, sea salt and puffed rice. Mix until thoroughly combined.
2. Line a baking sheet with parchment paper. Using a spoon, scoop out a tablespoon of the peanut butter filling, roll into a ball with your hands and place onto the baking sheet.
3. Repeat with the rest of the peanut butter filling, then place the baking sheet in the freezer for 10 minutes or longer.
4. Using the microwave or a bain marie, melt the chocolate chips for dipping.
5. Take the undipped bon bons out of the freezer, and using a fork, dip them in one by one, making sure to shake off any excess chocolate before placing back on the baking sheet.
6. Once all bon bons have been dipped, place back in the freezer until set.
7. Store in an airtight container in the freezer or fridge.

How to Make (Relatively) Healthy Peanut Butter Bonbons
A year ago I tried to make a healthier version of a recipe for peanut butter balls: Instead of sweetening the peanut butter with powdered sugar, I used maple syrup and honey. This meant the filling was a lot softer and stickier since there wasn't any powdered sugar to stiffen it up, and that lead to more challenges, especially when it was time to roll and dip them.
Anyway, I've since revamped the recipe and made it ever-so-slightly healthier by using flaxseed meal ( and coconut oil to thicken up the peanut butter filling. Since I use all-natural peanut butter and each jar can vary in consistency (some being thicker than others), I don't have set amounts when it comes to the ingredients (apart from the 16 oz jar of peanut butter). I just add stuff to taste and as necessary. This is a pretty flexible recipe: if you want it sweeter, add more honey or maple syrup. If you want it stiffer, add more flaxseed meal and/or coconut oil.
Peanut Butter Bonbons:
16 oz jar all-natural peanut butter (I use creamy)
1/4 to 1/2 cup coconut oil
flaxseed meal (I probably use around 1/3 to 1/2 cup)
maple syrup and/or honey to taste
1/2 teaspoon vanilla extract (if desired)
Around 8 ounces of your favorite chocolate for dipping.
Mix all ingredients together until well combined and chill for 3-4 hours. If mixture is too soft, add more flaxseed meal and/or coconut oil. Chill until the filling has set up enough so that you can scoop out balls with a small disher. Place the balls on a tray lined with parchment paper and chill for a few minutes while you melt some chocolate and find the toothpicks.
Dip one end of the toothpicks into melted chocolate and insert them about 3/4 of the way into the peanut butter balls. Chill for at least 6 hours, or preferably overnight. These need to be good and cold for dipping. There's no shame in putting them in the freezer if you're in a hurry, just be sure to put them back in the refrigerator for a few minutes before you dip them so they don't sweat (you don't want to deal with condensation when working with chocolate).
Melt chocolate and add a little coconut oil if it needs to be thinner. This will make dipping easier. As does using the toothpicks, and then you have a handle to pick up and eat the bonbons. After carefully dipping the peanut butter balls into the melted chocolate, take a few seconds to let any extra chocolate drip off--you can lightly tap the toothpicks on the side of the bowl to help it along. This prevents a puddle of chocolate from forming under the bonbons. Place the bonbons back on the tray and return to fridge once dipped.
These need to be kept in the refrigerator, but they're also yummy frozen.
